Cornish Hens With Crabmeat Stuffing Recipe

INGREDIENTS

  1. 4rock cornish game hens
  2. 3tablespoonsvegetable oil
  3. salt and pepper, to taste
  4. garlic powder, to taste
  5. paprika
  6. 1/2cupbutter
  7. 1clovegarlic, finely chopped
  8. 1/8cupparsley, chopped
  9. 1/4green onion, chopped
  10. 1/4cupcelery, chopped
  11. 8ounceslump crabmeator imitation crabmeat
  12. 1/2teaspoonsalt
  13. 1/4teaspoonpepper
  14. 1cupfine dry breadcrumbs
  15. 1/3cuphalf-and-half

DIRECTIONS

  1. Preheat oven to 350.
  2. Wash hens inside and out with cold water.
  3. Pat dry with paper towels.
  4. Rub oil lightly over hens.
  5. Season inside and out with salt, pepper, garlic powder and paprika.
  6. STUFFING.
  7. Melt butter in large pan.
  8. Saute garlic, parsley, green onion and celery till soft.
  9. Add crab meat, salt and pepper.
  10. Stir gently.
  11. Don’t break up crab too much.
  12. Turn heat down to simmer.
  13. Add bread crumbs and half and half a little at a time so mixture is not too dry.
  14. Remove from heat.
  15. Divide stuffing between hens and stuff into cavities.
  16. Tie legs together and place on rack in roasting pan.
  17. Bake for 1 hour.
  18. Internal temp should read 180 degrees.
