Corn Maquechoux Salad With Crawfish Recipe

INGREDIENTS

  1. The salad

  2. 1 (29 ounce)canwhole kernel corn, drained
  3. 8ounces cookedcrawfish tail meat
  4. 1stalkcelery, chopped
  5. 3plum tomatoes, seeded and chopped
  6. 1/2green bell pepper, chopped
  7. 2green onions, sliced
  8. The dressing

  9. 1/2cupolive oil
  10. 6tablespoonssugar
  11. 4tablespoonscider vinegar
  12. 1 1/2teaspoonssalt
  13. 3/4teaspoon coarse-grindblack pepper
  14. 1/2teaspooncayenne pepper
  15. 1/2teaspoongarlic powder

DIRECTIONS

  1. In a large bowl, combine corn, crawfish tail meat, celery, tomatoes, bell pepper and onions.
  2. In a smaller bowl, whisk together the olive oil, sugar, cider vinegar, salt, peppers and garlic powder.
  3. Let sit at least 30 minutes so sugar dissolves completely.
  4. Gently mix dressing into salad and combine thoroughly.
