Ciabatta Veggie Sandwich Recipe

INGREDIENTS

  1. 1ounce crumbledgorgonzola
  2. 1 ciabattaroll
  3. 3slicestomatoes
  4. 2slicesonions
  5. 2leavesred leaf lettuce, rinsed and dried
  6. 2-3slicesseedless cucumber(if seeded, remove seeds)
  7. 4black olives, thinly sliced
  8. 1-2marinated artichoke hearts (optional)
  9. 1-2teaspoonparmesan cheese (optional)
  10. Tzatziki Sauce from the Frugal Gourmet

  11. 2cupsplain yogurt
  12. 1smallcucumber, peeled,seeded,and shredded
  13. 2clovesgarlic, peeled and put through garlic press
  14. 1teaspoon gratedonions
  15. 1tablespoonfresh lemon juice
  16. 1teaspoonolive oil
  17. 1teaspoonfresh dill, chopped or1/2 teaspoondried dill
  18. salt & freshly ground black pepper

DIRECTIONS

  1. First, make the Tzatziki Sauce: Drain yogurt and grated cucumber in a cheesecloth lined colander for several hours.
  2. Mix with remaining ingredients and chill.
  3. Cut your Ciabatta Roll in half.
  4. Spread each half with about 1-2 tablespoons of the sauce,or to taste.
  5. Layer the roll with lettuce, tomato, onion, artichoke heats (if using),and olives.
  6. Press cheese(s) into the cut side of the top of roll.
  7. Place top half of the roll on the sandwich, cut in half and enjoy.
  8. I have also made this with Basil Tomato Feta and it is also good, I would think that blue cheese or goat’s cheese would be good also.
