Chilaquiles Recipe

INGREDIENTS

  1. 8corn tortillas
  2. 6eggs
  3. 2tablespoonsoil
  4. salt
  5. 2tomatoes
  6. 1serrano chili pepper
  7. 1/4onion
  8. 3 springscilantro
  9. 1clovegarlic
  10. 2tablespoons frescocheese

DIRECTIONS

  1. Cut corn tortillas however desired.
  2. Fry in oil until crispy then drain on brown paper bag.
  3. Roast tomatoe, onion, chile and garlic until a little black.
  4. Blend together with cilantro and salt.
  5. In separtate bowl add eggs and salt, maybe a little milk.
  6. Blend well.
  7. May need a little more oil when adding eggs to pan.
  8. Cook a little then add tortilla.
  9. After it’s done add the salsa right on top and mix it inches.
  10. Toppings:.
  11. Add cheese.
