Chicken Vegetable Chardonnay Recipe

INGREDIENTS

  1. 1-1 1/2lbchicken half
  2. 2parsnips, peeled and chopped
  3. 1headgarlic, peeled
  4. 2largeonions, chopped
  5. 5carrots, chopped
  6. 2zucchini, chopped
  7. 1/2cup choppedfresh parsley
  8. 2stalkscelery, chopped
  9. 2potatoes, peeled and chopped
  10. 1sweet potato, peeled and cubed
  11. 1 (3 ounce)packetchicken vegetable soup mix
  12. 1tablespoondried oregano
  13. 1teaspoonpaprika
  14. 8cupschicken stock
  15. 375mlChardonnay wine
  16. salt and pepper

DIRECTIONS

  1. In a large soup pot, combine chicken,parsnips,celery, potatoes,sweet potato,soup mix,oregano,paprika,chicken stock,wine,salt and pepper.
  2. Cover and bring to a boil over high heat.
  3. Boil for approximately 30 minutes.
  4. Remove chicken and debone.
  5. Return chicken to pot and simmer for at least 90 more minutes.
  6. Remember the longer this cooks the better the flavor will be.
  7. For a variation try adding a couple 8oz cans of chopped tomatoes.
