Chicken and Pineapple Salad Recipe
INGREDIENTS
- 4cups of dicedcooked chicken
- 2 (15 ounce)canspineapple chunks
- 2cupscelery, diagonally sliced
- 1/4cupgreen onions, sliced
- 1/3cuplow-fat mayonnaise
- 4tablespoonsMajor Grey chutney, chopped
- 1teaspoonlime rind, grated
- 4tablespoonslime juice
- 1/2teaspooncurry powder
DIRECTIONS
- Toss together chicken, pineapple, celery, and green onions.
- In a small bowl mix lime rind, lime juice, chutney, and curry.
- Wisk in mayonnaise.
- Pour over first ingredients, mix, and chill.
- Sprinkle peanuts on individual servings just before serving.
