Cheese Blintz Casserole Recipe

INGREDIENTS

  1. 1lbcream-style cottage cheese
  2. 1lbfarmer cheese, shredded
  3. 2eggs
  4. 1/4teaspoonsalt
  5. 1/4-1/2cupgranulated sugar
  6. 1/2teaspoonvanilla extract
  7. 1lemon, juice of
  8. 1cupbutter, melted and cooled slightly
  9. 2eggs
  10. 1/4cupmilk
  11. 3teaspoonsbaking powder
  12. 1/2cupsugar
  13. 1cupflour
  14. 1teaspoonvanilla extract
  15. sugar
  16. cinnamon
  17. 1 (21 ounce)canblueberry pie filling(or your preference)
  18. 1/2teaspoon gratedlemons, rind of

DIRECTIONS

  1. Preheat oven to 300 degrees F.
  2. In large bowl, combine fist 7 ingredients, blending well and set aside.
  3. Grease a 2-quart long baking dish.
  4. In a large bowl, combine the next 7 ingredients until blended.
  5. Pour 1/2 of the mixture into the prepared pan.
  6. Pour all of the first mixture on top of the batter in the pan and top with the other 1/2 of remaining batter, being careful not to mix together.
  7. Sprinkle with sugar and cinnamon and bake for 45 to 60 minutes.
  8. Warm the pie filling and lemon peel together and pour over slices of the blintz.
