Buckwheat Loaf Recipe

INGREDIENTS

  1. 5cups cookedbuckwheat groats
  2. 1cupcooked rice
  3. 1/3cuponions, chopped
  4. 1/4cupscallions, chopped
  5. 4tablespoonsparsley, chopped
  6. 1/3cuppastry flour
  7. 1teaspoonsalt
  8. 1/8teaspoonnutmeg
  9. 1pinchbasil
  10. Sauce

  11. 4cupstomato juice
  12. 2-3cupsAmerican cheese or cheddar cheese, your favorite.
  13. 1tablespoonbutter

DIRECTIONS

  1. Combine all the ingredients onto a loose mixture, if to dry, moisten with water.
  2. Place into a well greased or oiled loaf pan and press down lightly.
  3. Bake at 350 degrees for 1 hour.
  4. Sauce: heat tomato juice add cheese.
  5. stir until it is melted.
  6. Add 1 tablespoon butter.
  7. Pour over sliced buckwheat loaf.
