Brunswick Stew Recipe

INGREDIENTS

  1. 2quartsturkey stock
  2. 2lbsturkey meat
  3. 1rabbit(cut up)(optional)
  4. 1squirrel (optional)
  5. 3quartstomatoes(canned)
  6. 5onions(chopped)
  7. 1tablespoonbutter
  8. 5potatoes(pealed and cubed)
  9. 1lbbaby lima beans
  10. 1 1/2lbswhite shoepeg corn
  11. 1/2cupsugar
  12. 1teaspoonfresh ground pepper

DIRECTIONS

  1. Put stock, meat, and tomatoes in large stock pot and simmer gently.
  2. Add potatoes.
  3. Saute onions in butter and add to pot.
  4. Simmer this for 3 to 5 hours.
  5. Add limas, corn, sugar, and pepper last 30 minutes of cooking.
  6. Stir frequently to keep from scorching bottom of pan, or put on “reducer”.
  7. Correct seasoning and serve.
