Blueberry Galette Recipe

INGREDIENTS

  1. 3cupsfresh blueberries
  2. 2tablespoonscornstarch
  3. 1tablespoon gratedlemons, zest of
  4. 1tablespoonfresh lemon juice
  5. 1/4teaspooncinnamon
  6. 1/4teaspoonsalt
  7. 1/2cupsugar, plus
  8. 1teaspoonsugar
  9. 1refrigerated pie crust
  10. 1tablespoon coldbutter, cut into pieces
  11. 1egg, beaten
  12. gratedlemons, zest of(to garnish)(optional)
  13. cooking spray

DIRECTIONS

  1. preheat oven to 425.
  2. line a baking sheet with foil and spray with non stick spray.
  3. in a large bowl stir together blueberries, cornstarch, lemon zest and juice, 1/2 c sugar, cinammon and salt until combined.
  4. unwrap the pie dough and unfold onto a baking sheet.
  5. spoon the berry mixture into the center of the dough, leaving a 1 inch border.
  6. fold the edge of dough over the berries, pleating.
  7. dot butter over top of blueberries, brush the pastry with beaten egg.
  8. sprinklepastry edge with remaining sugar.
  9. bake for 25-30 minutes until bubbling.
  10. garnish with grated zest, if desired.
