Battered Chicken Tapas With Honey and Mustard ( Pollo Rebozado) Recipe

INGREDIENTS

  1. 3chicken breasts, cut in to bite sized pieces
  2. 3eggs
  3. flour, sufficient to coat the chicken pieces
  4. 5tablespoonsolive oil
  5. salt & freshly ground black pepper
  6. Honey Mustard Sauce

  7. 1/2cuphoney
  8. 1tablespoonDijon mustard
  9. 1teaspoonsoy sauce

DIRECTIONS

  1. Place chicken pieces in a bowl.
  2. Crack the eggs over the chicken and mix thouroughly with your hands.
  3. Add flour to the chicken mixture to thoroughly coat the chicken.
  4. The final consistency should be very wet, but not dripping.
  5. Heat the oil in a large frying pan, add the chicken and fry the chicken until golden on all sides.
  6. Remove from heat and salt and pepper to taste.
  7. Mix the honey, mustard and soy sauce in a small bowl about an hour ahead to blend flavors.
  8. Drizzle the honey mixture over the chicken right before serving.
