Basic Muffins Recipe

INGREDIENTS

  1. DRY INGREDIENTS

  2. 1 1/2cupsflour
  3. 1/2cupsugar
  4. 2teaspoonsbaking powder
  5. 1/2teaspoonsalt
  6. 2 1/2tablespoonsnonfat dry milk powder
  7. WET INGREDIENTS

  8. 1egg, well beaten
  9. 1/2cupwater
  10. 1/3cup meltedbutter
  11. ADDITIONS

  12. BLUEBERRY

  13. 1cupfresh blueberriesor canned blueberries, drained and dusted with
  14. flour
  15. BANANA CINNAMON

  16. 1 overripebanana, mashed
  17. 1teaspooncinnamon
  18. LEMON POPPYSEED

  19. 2tablespoonsfresh lemon juice(add with wet ingredients, and subtract 2 tablespoons water)
  20. 2lemons, zest of, finely grated(add with wet ingredients)
  21. 1tablespoonpoppy seeds(add with dry ingredients)

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. Line a 12-cup muffin pan with paper inserts.
  3. Combine the dry ingredients.
  4. In a small bowl, combine the wet ingredients.
  5. Make a well in the center of the dry ingredients and add the wet mixture all at once. Stir with a fork until just moist.
  6. At this point, add the additions for the type of muffin you want to make.
  7. Fill the muffin cups 2/3 full, and bake for 25-30 minutes.
