Barley Prairie Stew Recipe

INGREDIENTS

  1. 1/2cupall-purpose flour
  2. 1 1/2teaspoonssalt, divided
  3. 1 1/2teaspoonsground black pepper, divided
  4. 1lbstew meat, cut into 1/2 inch pieces
  5. 2tablespoonsoil
  6. 5carrots, sliced
  7. 4stalkscelery, sliced
  8. 1mediumonion, chopped
  9. 8cupsbeef broth
  10. 1teaspoongarlic powder
  11. 1teaspoonsage
  12. 1teaspoonoregano leaves
  13. 1teaspoonthyme leaves
  14. 3/4cuppearl barley
  15. 1 (8 ounce)packagemushrooms, sliced
  16. 1red bell pepper, sliced

DIRECTIONS

  1. In a zip lock plastic bag combine flour, 1/2 teaspoon each of the salt and pepper.
  2. Add small amounts of meat and shake to coat.
  3. Heat oil in a large pot with lid.
  4. Add meat, stir and cook until browned.
  5. Add the rest of the salt and pepper, carrots, celery, onion, beef broth, seasonings and barley.
  6. Cover and cook for 45 minutes.
  7. Stir in mushrooms and bell pepper.
  8. Cook for an additional 15 minutes.
