Balsamic Roast Italian Chicken Recipe

INGREDIENTS

  1. 1 (3 1/2 lb)fryer chickens
  2. Seasoning Mixture

  3. 2tablespoonsbalsamic vinegar
  4. 2tablespoonsolive oil
  5. 1tablespoonlemon juice
  6. 1teaspoondried oregano
  7. 1teaspoondried basil
  8. 1/2teaspoondried thyme
  9. 1/2teaspoonsalt
  10. 1/2teaspoonblack pepper
  11. 1clove mincedgarlic

DIRECTIONS

  1. Whisk together balsamic vinegar, olive oil and lemon juice.
  2. Add rest of seasoning ingredients and mix well.
  3. Slip your fingers under the skin of the breast and legs to form a pocket and spoon herb mixture inside.
  4. Place chicken, breast side up in a shallow roasting pan and bake at 375° for 1 1/4 hours or until done.
  5. Remove chicken from oven, cover with foil and let rest for 10 minutes before carving.
