Balsamic-Marinated Vegetables Recipe

INGREDIENTS

  1. 1 1/2cups uncookedbroccoli, seperated into florets
  2. 1 1/2cups uncookedcauliflower, seperated into florets
  3. 1mediumzucchini, sliced
  4. 12baby carrots, sliced
  5. 1/2sweet onion, sliced thin and seperated into rings
  6. Balsamic Dressing

  7. 1/2cupwater
  8. 1/4cupbalsamic vinegar, plus
  9. 2tablespoonsbalsamic vinegar
  10. 1/4cup finely snippedfresh parsley
  11. 2tablespoonsolive oil
  12. 2garlic cloves, minced
  13. 1/2teaspoonblack pepper
  14. salt

DIRECTIONS

  1. Combine the vegetables in a large glass or ceramic bowl.
  2. Mix dressing ingredients and pour over vegetables.
  3. Stir well, cover and refrigerate for 6 to 24 hours, stirring occasionally.
  4. Cooking time reflects time to marinate vegetables.
