Baby Shrimp Stuffed Filet of Sole Recipe

INGREDIENTS

  1. 1 1/2lbsfillets of sole
  2. 1/2lb pinkbaby shrimp
  3. 1/4cup choppedgreen bell peppers
  4. 1 choppedgreen onion
  5. 3tablespoonsparsley
  6. 4tablespoonsbutter(Divided)
  7. 2tablespoonsflour
  8. 1cupmilk
  9. 3tablespoonsparmesan cheese
  10. 1dashsalt
  11. 1dashpepper

DIRECTIONS

  1. Saute green pepper, onion, parsley, salt, pepper and parmesan cheese in 2 T of butter.
  2. Add Shrimp.
  3. Cook 3-4 minutes.
  4. Divide filling evenly among the filets.
  5. Roll up and hold with toothpick.
  6. Bake at 400 degrees for 15 minutes.
  7. Make white sauce with 2T butter, 2T flour and 1 cup milk.
  8. Pour over the fish.
  9. Garnish with paprika.
  10. Turn oven down to 350 and bake 15 minutes longer.
