Apricot Glazed Cornish Hens With Apricot Rice Stuffing Recipe

INGREDIENTS

  1. For Hens

  2. 2Cornish hens
  3. 1/4cupwater
  4. 6ouncesapricot preserves(sugarfree)
  5. 1/2teaspooncinnamon
  6. garlic powder
  7. cooking spray
  8. aluminum foil
  9. For Rice

  10. 1tablespoonolive oil
  11. 1clovegarlic, minced
  12. 1stalkcelery, finely chopped
  13. 1smallonion, finely chopped
  14. 6-8dried apricots, finely chopped
  15. 1/2cupbrown rice
  16. 1/2cuplong grain and wild rice blend(ParExcelence)
  17. 2cupschicken broth

DIRECTIONS

  1. For glaze Put 1/4 cup water,apricot preserve& cinnamon in a microwave safe bowl.
  2. Microwave on high about 20 seconds.
  3. Stir to blend.
  4. If not blending well microwave another 10 seconds.
  5. Stir again till smooth For rice Saute garlic, celery, onion, apricots in oil about 5 minutes.
  6. Add brown rice saute another 3 minutes.
  7. Add 2 cups chicken broth and 3-4 tablespoons of glaze sauce.
  8. Bring to a boil.
  9. Lower heat to a low simmer.
  10. Simmer covered 10-15 minutes.
  11. Add Pilaf rice.
  12. Stir Cover& simmer 15-25 minutes or longer until liquid is absorbed.
  13. Allow to cool.
  14. This could be done earlier in the day if you see fit.
  15. For Hens Pre-heat oven to 400 Line a 13 x 9 pan with foil.
  16. Spray foil with cooking spray.
  17. Wash hens.
  18. Remove giblets.
  19. Pat dry.
  20. Sprinkle with garlic powder in& out of hens.
  21. Stuff with rice mixture.
  22. Brush with glaze mixture.
  23. To prevent over browning make a foil tent.
  24. Crease a sheet of foil crosswise through the center to form a tent leave 1-2 inches between top of hens so heat can circulate crimp on sides.
  25. Bake 30 minutes.
  26. Remove foil.
  27. Brush with glaze.
  28. Bake uncovered until hens are tender& juices run clear about 40-45 minutes.
  29. Basting about every 10-15 minutes untill glaze is used up.
  30. 2-4 servings depending on appitite.
