All-Meat Chili Recipe

INGREDIENTS

  1. 1/2lbmild Italian sausage
  2. 1lbground turkey, crumbled
  3. 1orange
  4. 1mediumonion, finely chopped
  5. 1red bell pepperor green bell pepper, chopped
  6. 1garlic clove, peeled, minced
  7. 1teaspoonsalt
  8. 1teaspoonpaprika
  9. 1/2teaspoonground cumin
  10. 1/8teaspoonground cloves
  11. 1smalldried hot red chili pepper, crushed
  12. 1 (16 ounce)candiced tomatoes
  13. 1/4cuptomato paste
  14. 1/2cuptequila
  15. sour cream, to garnish
  16. fresh cilantro stems, to garnish
  17. avocados, slices for garnish

DIRECTIONS

  1. Remove any casings from sausages, crumble meat into a large, deep, heavy frying pan.Cook over medium-high heat, stirring often, until lightly browned.Mix in ground turkey and cook until it begins to brown.
  2. Meanwhile, grate zest and squeeze juice from orange; set aside.
  3. To sausage and turkey, add onion and bell pepper.Cook over medium heat, stirring often, until onion is soft and lightly browned.Mix in garlic, salt, paprika, cumin, cloves and dried chili pepper.Stir in orange zest and juice, tomatoes plus their juices, tomato paste and tequila.Bring to a boil, cover, reduce heat and simmer about 1 hour.
  4. If chili is too thin for your taste, uncover and cook over medium-low heat, stirring occasionally, until thickened to your liking.
  5. Serve garnished with sour cream, avocado and cilantro.
