Maria's Chicken Canapes Recipe

INGREDIENTS

  1. 2cups cooked choppedchickens
  2. 3/4cupmayonnaise, more if needed to moisten
  3. 1/4cup mincedfresh onions
  4. 1 (4 ounce)cangreen chilies
  5. 1cupcheddar cheese, grated
  6. garlic salt, to taste
  7. miniature party rye rounds

DIRECTIONS

  1. Preheat oven to Broil.
  2. Combine all ingredients and place on the Party Rye bread.
  3. Broil until brown and bubbly.

Crock Pot Chicken Stroganoff Recipe

INGREDIENTS

  1. 1cuplight sour cream
  2. 1tablespoonflour
  3. 1envelopechicken gravy mix
  4. 1cupwater
  5. 1lbboneless skinless chicken breast halves, cut into 1 inch pieces
  6. 1 (16 ounce)bag frozen stewvegetables, thawed
  7. 1 (4 ounce)cansliced mushrooms, drained
  8. 1cupfrozen green peas, thawed
  9. 1 1/2cups regularbaking mixor reduced-fat baking mix
  10. 4green onions, chopped
  11. 1/2cupmilk

DIRECTIONS

  1. Mix sour cream, flour, gravy mix and water in 3 1/2- to 4-quart slow cooker until smooth.
  2. Stir in chicken, stew vegetables and mushrooms.
  3. Cover and cook on Low heat setting for 5 hours or until chicken is tender and sauce is thickened.
  4. Stir in peas.
  5. Mix baking mix and green onions.
  6. Stir in milk just until moistened.
  7. Drop dough by rounded tablespoonfuls onto chicken-vegetable mixture.
  8. Cover and cook on High heat setting for 45-50 minutes or until toothpick inserted in center of dumplings comes out clean.
  9. Serve immediately.
  10. Makes 4 servings.

Spaghetti Squash Italian Style Recipe

INGREDIENTS

  1. 2lbsspaghetti squash
  2. 2tablespoonsolive oil
  3. 1red onion, thinly sliced
  4. 8ounceszucchini, cut into 1/2 inch dice
  5. 4mediumtomatoes, diced(romas are best)
  6. 1/4teaspoonsalt
  7. 1/4teaspoonfresh ground pepper
  8. 1/2cuplow-fat parmesan cheese, grated
  9. 1smalllemon, sliced

DIRECTIONS

  1. Cut the squash in half lengthwise and remove seeds.
  2. Place cut sides down in a glass baking dish.
  3. Add 1/4 cup water and cover with plastic wrap.
  4. Microwave on high for 8-10 minutes until tender; cool.
  5. In a large skillet, heat 1 tablespoons.
  6. of oil.
  7. Add the onion and cook until translucent.
  8. Add the zucchini and cook for 4-5 minutes until the zucchini begins to brown.
  9. Add the tomatoes, salt and pepper.
  10. Reduce the heat; simmer gently for 10 minutes.
  11. Using a fork, scrape the squash strands into a bowl.
  12. Toss with the remaining oil.
  13. For presentation you can do two things.
  14. Just toss the squash with the cooked vegetables and sprinkle with cheese or as recommended in the book: Mound the squash in the center of 4 pasta bowls.
  15. Spoon the vegetable mixture around the squash.
  16. Drizzle with more oil if desired, and garnish with parmesan cheese.
  17. Add the lemon slices.

Swedish Coconut Cookies Recipe

INGREDIENTS

  1. 3 1/2cupsall-purpose flour
  2. 2cupssugar
  3. 2cupsbutter, softened
  4. 1tablespoonbaking powder
  5. 1teaspoonbaking soda
  6. 1teaspoonvanilla
  7. 1 1/2cupsflaked coconut

DIRECTIONS

  1. In large bowl, combine, flour, sugar, butter, baking powder, baking soda and vanilla.
  2. Beat on low, scraping bowl often, until well blended, 3-4 minutes.
  3. Stir in coconut.
  4. Divide cookie dough into halves, shape into a roll 12 x 2.
  5. Wrap in wax paper, refridgerate until firm- around 2 hours.
  6. Heat oven to 350°.
  7. Cut rolls into 1/4″ to 1/2″ slices.
  8. Place 2-inches apart on ungreased cookie sheet.
  9. Bake 9-14 minutes.
  10. Cool slightly, then remove from pan.

Chocolate Sundae Pie Recipe

INGREDIENTS

  1. 4ouncescream cheese, softened
  2. 1/2cupsweetened condensed milk
  3. 2teaspoonsbaking cocoa
  4. 1 (8 ounce)cartonCool Whip, thawed
  5. 1chocolate crumb crust(9 inch)
  6. 1/2cupchocolate syrup, divided
  7. 1/2cup choppedpecans, divided (optional)

DIRECTIONS

  1. In a mixing bowl, beat cream cheese until smooth.
  2. Add milk and cocoa, beat until smooth.
  3. Fold in whipped topping.
  4. Spoon into crust.
  5. Drizzle with chocolate syrup and pecans.
  6. Cover and freeze overnight.
