INGREDIENTS

Crust
- 1/4cup meltedbutter
- 1 3/4cupsgraham wafers, crushed(I use animal cookies)

Filling
- 8ouncescream cheese
- 2cups seivedcottage cheese
- 2teaspoonsvanilla extract
- 1dashsalt
- 3eggs, seperated
- 2/3cupCarnation Evaporated Milk(whole)
- 2tablespoonsall-purpose flour
- 1tablespoonlemon juice
- 2/3cupgranulated sugar

Garnish
- freshfruit, of choice or serve plain.
DIRECTIONS
- Preheat oven to 350 degrees F.
- Grease a 9 inch spring form pan.
- Melt butter and combine with crumbs, press into the cake pan bottom.
- Filling: Beat cream cheese and cottage cheese, vanilla, salt, egg yolks, milk, flour and lemon juice in a large bowl.
- Beat until smooth.
- Beat egg whites until foamy, and add in the sugar, continue beating until soft peaks form.
- Fold peaked whites into the cheese mixture.
- Spoon into crust and place in oven.
- Bake 60 minutes or until set.
- Remove and let set at room temp until well cooled.
- Cover and chill well.
- Serve with fresh fruit sliced.

INGREDIENTS

Crust
- 1/3cupbutter
- 1 3/4cups animalcookies, crushed

Filling
- 12ouncesmarshmallows, cut up
- 1/3cupcreamor milk
- 16ouncescream cheese
- 2tablespoonslemon juice
- 1cupwhipping cream, whipped

Garnish
- 2ouncessemisweet chocolate, melted
DIRECTIONS
- Grease a 9 inch spring form pan.
- Crust: Melt butter and combine with crushed cookies.
- Press into prepared pan.
- Set aside.
- Filling: Combine milk or cream and marshmallows in a saucepot over low heat, and melt.
- Stirring all the while.
- Remove and cool.
- Beat cream cheese and lemon juice in a large bowl.
- Blend in the cooled marshmallow/ cream mixture until smooth.
- Fold in the whipped whipping cream.
- Spoon into crust.
- Chill 3 hours or until set.
- Melt chocolate if desired and drizzle over the top of cake in a pretty pattern.
- Serve.
- If desired you may fold in along with the whipping cream, some fresh cut strawberries,or fresh raspberries… or fresh diced peaches, or pineapple…the choice is yours.
- Then spoon into the shell and chill until set.
- Serve.

INGREDIENTS
- 7ounces bestbittersweet chocolate
- 7/8cupunsalted butter
- 3/4cupgranulated sugar
- 5eggs, whites and yolks seperated
- 1tablespoonpure vanilla extract
- 2tablespoonsunsweetened cocoa powder
- 1pinchsalt
DIRECTIONS
- Preheat oven to 350 degrees F.
- Melt chocolate and cool.
- Melt butter.
- In a bowl, combine melted chocolate and butter.
- Beat in the sugar and egg yolks.
- Whisk in the vanilla, and cocoa powder and salt.
- Beat egg whites until a soft to heavy peaks.
- Fold in the stiffly beaten egg whites a little at a time.
- Pour into a greased buttered 10 inch spring form pan.
- Bake for 25 minutes.
- Remove from oven.
- Remove rim and press down while warm for a denser cake.
- (I did not do this).
- Serve warm or cold with some devon pouring cream, or a stencil design with powdered sugar.

INGREDIENTS
- 1 (16 ounce)jar hellmanmayonnaise
- 1 (16 ounce)containersour cream
- 3lbsbacon, fried and crumbled
- 2cups shreddedlettuce(to taste)
- 2 dicedroma tomatoes
- 1bunchgreen onions, diced
- 1cup shreddedsharp cheddar cheese
DIRECTIONS
- Fry the bacon, drain, and crumble.
- Mix together half of the bacon, the mayonnaise, and the sour cream.
- Spread on a platter and chill.
- Just before serving, top with shredded lettuce, diced tomatoes, diced green onions, and shredded cheddar cheese.
- Sprinkle with the remaining bacon.
- Serve with tortilla chips.

INGREDIENTS
- 4cups of chopped cookchickens
- 2mediumonions, chopped
- 2clovesgarlic, chopped
- 3tablespoonscanola oil
- 2canscanned Mexican style stewed tomatoes(14 and 1/2 ounce)
- 1can choppedgreen chilies, drained(4.5 ounce)
- 1/2teaspoonsalt
- 24tortillas
- 2cupshalf-and-half
- 1teaspoonchicken bouillon granules
- 2cupsmonterey jack cheese, shredded(8 ounce)
- 2cupscheddar cheese, shredded(8 ounce)
- 2cupsmozzarella cheese, shredded(8 ounce)
DIRECTIONS
- Saute onion and garlic in hot oil in your large skillet over medium-high heat.
- Stir chicken and tomatoes, green chiles and salt, Bring to a boil, reduce heat and simmer, stirring once in awhile.
- for at least 15 minutes.
- Spoon about 1/4 chicken mixture down center of each torilas, and place, seam side down, in 2 lightly greased baking dishes.
- (13 inch x 9 inch) Heat half and half and bouillon granules in a large pan over low heat until well blended.
- Pour over torillas.
- Bake and cover at 350 degrees for 10 minutes and then uncover for 10 minutes.
- Sprinkle cheese and bake for another 5 minutes.
