The Bronx Cheesecake Recipe

INGREDIENTS

  1. Crust

  2. 1/4cup meltedbutter
  3. 1 3/4cupsgraham wafers, crushed(I use animal cookies)
  4. Filling

  5. 8ouncescream cheese
  6. 2cups seivedcottage cheese
  7. 2teaspoonsvanilla extract
  8. 1dashsalt
  9. 3eggs, seperated
  10. 2/3cupCarnation Evaporated Milk(whole)
  11. 2tablespoonsall-purpose flour
  12. 1tablespoonlemon juice
  13. 2/3cupgranulated sugar
  14. Garnish

  15. freshfruit, of choice or serve plain.

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Grease a 9 inch spring form pan.
  3. Melt butter and combine with crumbs, press into the cake pan bottom.
  4. Filling: Beat cream cheese and cottage cheese, vanilla, salt, egg yolks, milk, flour and lemon juice in a large bowl.
  5. Beat until smooth.
  6. Beat egg whites until foamy, and add in the sugar, continue beating until soft peaks form.
  7. Fold peaked whites into the cheese mixture.
  8. Spoon into crust and place in oven.
  9. Bake 60 minutes or until set.
  10. Remove and let set at room temp until well cooled.
  11. Cover and chill well.
  12. Serve with fresh fruit sliced.

Marshmallow Cheesecake Recipe

INGREDIENTS

  1. Crust

  2. 1/3cupbutter
  3. 1 3/4cups animalcookies, crushed
  4. Filling

  5. 12ouncesmarshmallows, cut up
  6. 1/3cupcreamor milk
  7. 16ouncescream cheese
  8. 2tablespoonslemon juice
  9. 1cupwhipping cream, whipped
  10. Garnish

  11. 2ouncessemisweet chocolate, melted

DIRECTIONS

  1. Grease a 9 inch spring form pan.
  2. Crust: Melt butter and combine with crushed cookies.
  3. Press into prepared pan.
  4. Set aside.
  5. Filling: Combine milk or cream and marshmallows in a saucepot over low heat, and melt.
  6. Stirring all the while.
  7. Remove and cool.
  8. Beat cream cheese and lemon juice in a large bowl.
  9. Blend in the cooled marshmallow/ cream mixture until smooth.
  10. Fold in the whipped whipping cream.
  11. Spoon into crust.
  12. Chill 3 hours or until set.
  13. Melt chocolate if desired and drizzle over the top of cake in a pretty pattern.
  14. Serve.
  15. If desired you may fold in along with the whipping cream, some fresh cut strawberries,or fresh raspberries… or fresh diced peaches, or pineapple…the choice is yours.
  16. Then spoon into the shell and chill until set.
  17. Serve.

Chocolate Flourless Cake Recipe

INGREDIENTS

  1. 7ounces bestbittersweet chocolate
  2. 7/8cupunsalted butter
  3. 3/4cupgranulated sugar
  4. 5eggs, whites and yolks seperated
  5. 1tablespoonpure vanilla extract
  6. 2tablespoonsunsweetened cocoa powder
  7. 1pinchsalt

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Melt chocolate and cool.
  3. Melt butter.
  4. In a bowl, combine melted chocolate and butter.
  5. Beat in the sugar and egg yolks.
  6. Whisk in the vanilla, and cocoa powder and salt.
  7. Beat egg whites until a soft to heavy peaks.
  8. Fold in the stiffly beaten egg whites a little at a time.
  9. Pour into a greased buttered 10 inch spring form pan.
  10. Bake for 25 minutes.
  11. Remove from oven.
  12. Remove rim and press down while warm for a denser cake.
  13. (I did not do this).
  14. Serve warm or cold with some devon pouring cream, or a stencil design with powdered sugar.

BLT Dip Recipe

INGREDIENTS

  1. 1 (16 ounce)jar hellmanmayonnaise
  2. 1 (16 ounce)containersour cream
  3. 3lbsbacon, fried and crumbled
  4. 2cups shreddedlettuce(to taste)
  5. 2 dicedroma tomatoes
  6. 1bunchgreen onions, diced
  7. 1cup shreddedsharp cheddar cheese

DIRECTIONS

  1. Fry the bacon, drain, and crumble.
  2. Mix together half of the bacon, the mayonnaise, and the sour cream.
  3. Spread on a platter and chill.
  4. Just before serving, top with shredded lettuce, diced tomatoes, diced green onions, and shredded cheddar cheese.
  5. Sprinkle with the remaining bacon.
  6. Serve with tortilla chips.

Chicken and Three Cheese Enchiladas Recipe

INGREDIENTS

  1. 4cups of chopped cookchickens
  2. 2mediumonions, chopped
  3. 2clovesgarlic, chopped
  4. 3tablespoonscanola oil
  5. 2canscanned Mexican style stewed tomatoes(14 and 1/2 ounce)
  6. 1can choppedgreen chilies, drained(4.5 ounce)
  7. 1/2teaspoonsalt
  8. 24tortillas
  9. 2cupshalf-and-half
  10. 1teaspoonchicken bouillon granules
  11. 2cupsmonterey jack cheese, shredded(8 ounce)
  12. 2cupscheddar cheese, shredded(8 ounce)
  13. 2cupsmozzarella cheese, shredded(8 ounce)

DIRECTIONS

  1. Saute onion and garlic in hot oil in your large skillet over medium-high heat.
  2. Stir chicken and tomatoes, green chiles and salt, Bring to a boil, reduce heat and simmer, stirring once in awhile.
  3. for at least 15 minutes.
  4. Spoon about 1/4 chicken mixture down center of each torilas, and place, seam side down, in 2 lightly greased baking dishes.
  5. (13 inch x 9 inch) Heat half and half and bouillon granules in a large pan over low heat until well blended.
  6. Pour over torillas.
  7. Bake and cover at 350 degrees for 10 minutes and then uncover for 10 minutes.
  8. Sprinkle cheese and bake for another 5 minutes.
