Roasted Garlic Chicken with Rosemary Recipe

INGREDIENTS

  1. 3headsgarlic
  2. 1lemon, cut in half
  3. 2tablespoonsbutter, at room temp. divided
  4. 1tablespoon choppedfresh rosemary, plus
  5. 3sprigsfresh rosemary
  6. 1teaspoonsalt, divided
  7. 3/4teaspoonpepper, divided
  8. 6-7lbsroasting chickens
  9. 1cupchicken broth
  10. 1tablespoonall-purpose flour
  11. 1/2cupwhite wine

DIRECTIONS

  1. Preheat oven to 350.
  2. Chop 2 cloves garlic from 1 head, reserve Cut off top third of all 3 garlic heads and discard.
  3. Grate 2 tsp zest from lemon; cut lemon in half.
  4. Combine chopped garlic& zest with 1 tbsp butter, chopped rosemary, 1/4 tsp salt& 1/4 tsp pepper.
  5. Separate chicken skin from breast; spread butter mixture over breast meat, place lemon halves, 1 garlic head and rosemary sprigs in cavity.
  6. Spread remaining butter over skin; sprinkle with 1/4 tsp salt& 1/4 tsp pepper.
  7. Place chicken on rack in roasting pan; add remaining garlic heads to roasting pan; roast for about 2 hrs or until juices run clear when pierced with fork; transfer to serving platter; let stand 10 minutes before carving Meanwhile, place broth in bowl; stir in flour& remaining salt& pepper; reserve Place roasting pan over two burners on high; add wine, cook stirring constantly about 1 minute; add broth mixture;cook stirring constantly until thickened;2-3 minutes.
  8. Remove from heat;strain if necessary; serve chicken with gravy.
  9. Serve roasted garlic cloves from heads with chicken.

Muesli Recipe

INGREDIENTS

  1. 2cupsrolled oats
  2. 1/2cupoat bran
  3. 1/2cup chopped rawcashew nuts

DIRECTIONS

  1. Mix ingredients together and store in an airtight container.
  2. Serve with milk or milk substitutes and chopped fresh or canned pears or cooked apples.

Artichoke and Hearts of Palm Salad Recipe

INGREDIENTS

  1. 1 (14 ounce)can quarteredartichoke hearts, drained
  2. 1 (14 ounce)can slicedhearts of palm, drained
  3. 1/4cup thin slicedred onions
  4. 2tablespoonsextra virgin olive oil
  5. 2tablespoonslime juice
  6. 1tablespoon choppedfresh parsley
  7. 1/4cup sundried sweetened cranberries(Craisins)
  8. salt & pepper

DIRECTIONS

  1. Combine all ingredients in a nonreactive large mixing bowl.
  2. Cover& chill overnight.

Beef Braciola Recipe

INGREDIENTS

  1. Beef Filling

  2. 1/2lbground chuck
  3. 1tablespoon choppedfresh parsley
  4. 2tablespoonsbreadcrumbs
  5. 1/4teaspoon mincedgarlic
  6. 1/4teaspoonsalt
  7. 1/4cup gratedromano cheese
  8. Braciola

  9. 4 (6 ounce) topround steaks, cut 1/4 inch thick
  10. 1/2cupoil(for frying)
  11. 1/2cupflour, for coating

DIRECTIONS

  1. To Make Filling: Combine all ingredients and mix well.
  2. To Make Braciola: Lay the steak slices on a work surface Divide the filling into 4 portions and place a portion atop each steak slice, spread the filling thinly over the entire surface of each slice and roll, jelly roll style, starting at the shorter end and secure each roll with a toothpick.
  3. Heat oil in skillet Place flour in shallow dish& dredge each beef roll in flour, then place rolls in skillet& brown on all sides.
  4. Remove and drain Add to your favorite pot of spaghetti sauce and simmer for 1 1/2- 2 hrs.

Mixed Greens Salad Recipe

INGREDIENTS

  1. 4cupsendive(a small head of lettuce)
  2. 4cupsromaine lettuce
  3. 4cupsiceberg lettuce
  4. 1largecucumber, sliced
  5. 6-8green onions, cut into 1 inch pieces
  6. 1/4cupsharp cheddar cheese, chopped
  7. 2cupscroutons
  8. 3/4cupolive oil
  9. 1clovegarlic, minced
  10. 1tablespoonlemon juice
  11. 1mediumavocado, peeled and sliced
  12. 2mediumtomatoes, cut in four
  13. 1/8teaspoonsalt
  14. 1/8teaspoonblack pepper

DIRECTIONS

  1. Combine 1/4 oil and garlic, stir well.
  2. Let stand at least 30 minutes.
  3. Combine endive,romaine lettuce, iceberg lettuce, cucumber, green onions, avocado, tomatoes, and cheese in a large bowl.
  4. Combine remaining 1/2 cup oil, lemon juice,salt and black pepper, stir well.
  5. Pour dressing mixture over salad.
  6. and toss gently.
  7. Pour garlic mixture over salad and add croutons.
