Baked Texas Jalapeno Peppers Recipe

INGREDIENTS

  1. 25mediumjalapeno peppers
  2. 1 (8 ounce)packagecream cheese, softened
  3. 3cups shreddedcheddar cheese
  4. 1 1/4teaspoonsworcestershire sauce
  5. 4slicesbacon, cooked and crumbled

DIRECTIONS

  1. Cut jalapeno peppers in half lengthwise; remove seeds.Place peppers in boiling water for 5 minutes.Drain well.
  2. Combine cream cheese, cheddar cheese and worchestershire sauce, stir well.
  3. Place one heaping teaspoon cheese mixture on each pepper half.Sprinkle with bacon; Place on a baking sheet.
  4. Bake at 400°F for 5 minutes or until cheese is melted.

Ranch-Style Beans (AKA Cowboy beans) Recipe

INGREDIENTS

  1. 1lbdry pinto beans
  2. 8cupswater(I use 4 cups of beef stock 4 cups water)
  3. 1mediumonion, diced
  4. 1green pepper, diced
  5. 2clovesgarlic, minced
  6. 2tablespoonsWorcestershire sauce
  7. 1tablespoonchili powder
  8. 1/2teaspoonsalt
  9. 1/2teaspoondry mustard
  10. 1/2teaspoonpepper
  11. 1 (10 ounce)can dicedtomatoes and green chilies

DIRECTIONS

  1. Place beans in a dutch oven: add water 2 inches above beans.
  2. Bring to a boil, boil 1 minute.
  3. Cover and remove from heat and let stand 1 hour Drain Bring beans and 8 cups water to a boil in dutch oven Cover, reduce heat and simmer 1 hour until beans are tender Add onion, and the next 7 ingredients simmer 30 minutes Add tomatoes simmer 30 minutes and serve.

Soft Scrub Recipe

INGREDIENTS

  1. 1/2cupborax
  2. 4tablespoonsliquid soap(I use Murphy’s Oil Soap)
  3. essential oils, as desired

DIRECTIONS

  1. Put the borax in a container with a lid. Add the liquid soap a bit at a time.
  2. The borax won’t dissolve.
  3. Mix (I use a fork to mix.) When the mixture is the consistency of frosting it is ready to use.
  4. Add essential oils if desired.
  5. I am going to try orange next time!
  6. Scrub away!
  7. You can make as much or as little as you like.
  8. Keep covered so it doesn’t dry out.

Grilled Chicken/Chocolate Chili Recipe

INGREDIENTS

  1. 1 1/2teaspoonssalt
  2. 1teaspoonpepper
  3. 1tablespoongarlic powder
  4. 1teaspoonground cinnamon
  5. 2 1/2tablespoonscumin powder(or chili powder)
  6. 2tablespoonsunsweetened cocoa powder
  7. 1largeonion, coarse chopped
  8. 2tablespoonsoil, of your choice
  9. 2 (15 ounce)cansstewed tomatoes
  10. 1cupwater
  11. 1 (6 ounce)cantomato sauce
  12. 1 (15 ounce)canblack beans, rinsed well drained
  13. 1 (15 ounce)candark red kidney beans, rinsed drained
  14. 3/4cup choppedcilantro
  15. 1largered pepper, cut into large chunks
  16. 1mediumgreen pepper or yellow pepper, chunked
  17. 4boneless skinless chicken breast halves
  18. olive oil
  19. 1teaspoonsalt
  20. cilantro leaves

DIRECTIONS

  1. Fry first 7 ingredients in the 2 tbsp. oil ’til onions are transparent.
  2. Add next 6 ingredients, simmer 45 mins., meanwhile prepare chicken:
  3. Cut chicken into bite-sized pieces.
  4. In a bowl, cover breast chunks with olive oil, add salt, cilantro and set aside.(I do this the night before and let it marinade overnight in a baggie)
  5. Add more water to the chili (or other liquid: broth, black coffee) if necessary.
  6. Add the pepper chunks, simmer for 1/2 hr.
  7. Meanwhile, remove chicken from marinade (discard leftover marinade) and grill 4-5 mins.
  8. I use a George Forman grill, or broil.
  9. When the chili is ready, gently stir-in the grilled chicken. Don’t cook, just heat low for 20 minutes.
  10. Adjust seasoning. Optional: 1/4 tsp cayenne pepper can be added.
  11. Serve over rice or in a bread bowl.
  12. Toppings: sour cream, grated jalapeno-jack cheese.

Really Easy Beef Stew Recipe

INGREDIENTS

  1. 1 1/2lbsstewing beef, cut into 1 inch chunks
  2. 1onion, chopped into 1 inch pieces
  3. 2carrots, cleaned and chopped into 1 inch pieces
  4. 2celery ribs, cut into 1 inch pieces
  5. 3smallpotatoes, cut into 1-inch pieces
  6. 1 (10 1/2 ounce)cantomato soup
  7. 1teaspoonsalt
  8. 1teaspoonpepper
  9. 1teaspoonbasil

DIRECTIONS

  1. Put the meat, carrots, onion and spices into a Dutch oven.
  2. Cover with tomato soup, making sure all the pieces are covered.
  3. Bake at 325 degrees for 3 hours.
  4. Add potatoes and cook for an additional 45 minutes.
  5. Enjoy!
