Chicken Curry in Roasted Acorn Squash Recipe

INGREDIENTS

  1. 1smallacorn squash
  2. 12ouncesboneless skinless chicken breasts
  3. 1red pepper, chopped
  4. 1tablespoonmild curry powder
  5. 1tablespoonolive oil
  6. salt
  7. pepper
  8. 1/2cupmilk
  9. 1cupyellow onions, chopped
  10. 1/4cupgolden raisins
  11. 1/4cupcilantro, chopped

DIRECTIONS

  1. Preheat the oven to 450°.
  2. Cut the squash in half. Rub it with half the oil and the salt and pepper.
  3. Place on baking sheet and roast until flesh is soft and brown, about 25 minutes.
  4. While squash is roasting, heat the remaining oil in large pan over medium heat. add the chicken, bell pepper and onion. Sauté for 3 minutes then add the curry powder, milk and raisins. Mix thoroughly. Simmer over low heat for 10 minutes.
  5. Serve a scoop of the chicken curry inside the roasted squash, garnish with cilantro.

Russian Chicken Sandwich Recipe

INGREDIENTS

  1. 4largesandwich buns
  2. 4boneless skinless chicken breasts
  3. 8slicesbacon
  4. 4slicesmonterey jack cheese
  5. 4slicesred onions
  6. 4slicestomatoes
  7. lettuce
  8. mayonnaise
  9. Russian salad dressing

DIRECTIONS

  1. Grill (or Broil)the chicken breasts just until done.
  2. Toast the buns.
  3. Spread mayo on the buns.
  4. On the top bun place lettuce, tomato and onion.
  5. Place two slices of bacon on each breast and top with the cheese slice.
  6. Place the chicken under the broiler just until the cheese is melted.
  7. Transfer to the buns and serve with Russian dressing drizzled over the meat.
