Chicken Pesto Sandwich Recipe

INGREDIENTS

  1. 4 personal sizeprepared pizza crust
  2. 1tablespoonolive oil
  3. 1mediumcelery, chopped(1/2 cup)
  4. 1cup cut-upcooked chicken
  5. 1/3cupbasil pesto
  6. 2tablespoons freshly gratedparmesan cheese
  7. 1/2cup shreddedlettuce

DIRECTIONS

  1. Heat pizza crusts as directed on package if desired.
  2. Meanwhile, heat oil in 10-inch skillet over medium-high heat.
  3. Cook celery in oil 4 to 5 minutes, stirring occasionally, until crisp-tender; reduce heat.
  4. Stir in chicken and pesto.
  5. Cook, stirring occasionally, until hot.
  6. Spoon chicken mixture onto pizza crusts.
  7. Mix cheese and lettuce; sprinkle over chicken mixture.
  8. Cut each pizza crust in half.

Nutty Cheesecake Squares Recipe

INGREDIENTS

  1. 2cupsall-purpose flour
  2. 1cup finely choppedwalnuts
  3. 2/3cup packedbrown sugar
  4. 1/2teaspoonsalt
  5. 2/3cupbutter
  6. Filling

  7. 16ouncescream cheese, softened
  8. 1/2cupsugar
  9. 2eggs
  10. 1/4cupwhipping cream
  11. 1tablespoonvanilla extract

DIRECTIONS

  1. In a bowl, combine flour, walnuts, brown sugar and salt; cut in butter until the mixture resembles coarse crumbs.
  2. Set half aside; press remaining crumb mixture onto the bottom of a greased 13 X 9-inch baking pan.
  3. Bake at 350 degrees for 8-12 minutes, or until lightly browned.
  4. In a mixing bowl, beat filling ingredients until smooth; pour over crust.
  5. Sprinkle with reserved crumb mixture.
  6. Bake at 350 degrees for 20 to 25 minutes or until a knife inserted near the center comes out clean.
  7. Cool completely.
  8. Store in the refrigerator.
  9. **Cook time does not include cooling time.
