Simple Artichoke Soup Recipe

INGREDIENTS

  1. 1 (14 ounce)canwater-packed artichoke hearts
  2. 1 (14 ounce)canvegetable broth
  3. 1tablespoonolive oil
  4. 1tablespoonflour
  5. 1/4teaspooncayenne
  6. 1/4teaspoonground thyme
  7. 1/4teaspoongarlic powder

DIRECTIONS

  1. Drain and rinse the artichokes.
  2. Put artichokes and vegetable broth in blender or food processor and blend until completely liquid.
  3. Warm Olive Oil in a saucepan on med-high heat.Add flour and stir constantly until starting to turn brown.Slowly add the artichoke broth a little bit at a time, stirring constantly so that it doesn’t become lumpy.
  4. Add spices to taste.Cook for 5 minutes.Serve hot.

Lord’s Acre Potato Salad Recipe

INGREDIENTS

  1. 180lbspotatoes
  2. 10lbsonions
  3. 18dozeneggs(hard boiled)
  4. 1/4gallonmayonnaise(Miracle Whip)
  5. 2 1/2gallonspickles(Curry pickle Maxine’s Curry Pickle (A Sweet Pickle))
  6. 9lbssugar
  7. 2 1/2quartsvinegar
  8. salt
  9. celery seeds

DIRECTIONS

  1. Peel and dice potatoes, keeping in water so they do not turn brown.
  2. Peel and dice onions.
  3. Boil potatoes until just tender.
  4. Refrigerate onions.
  5. Refrigerate potatoes.
  6. Next day make hard boiled eggs, and dice.
  7. Combine all ingredients, adjusting seasonings to taste.
  8. Refrigerate overnight.
  9. Serve.
