Caramelized Onion Pizza With Gorgonzola, Bacon and Arugula Recipe

INGREDIENTS

  1. 4slicesbacon, chopped
  2. 2teaspoonsolive oil
  3. 12cupsonions, thinly sliced
  4. 2teaspoonsfresh rosemary, chopped & divided
  5. 1/2teaspoonsalt
  6. 1/4teaspoonblack pepper
  7. 1 (12 inch)Boboli pizza crusts
  8. 1/2cupgorgonzola, crumbled
  9. 2tablespoonswalnuts, coarsely chopped
  10. 1cuparugula, trimmed

DIRECTIONS

  1. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings.Set bacon aside.
  2. Add oil to bacon drippings in skillet over medium-high heat. Add onion, and sauté 5 minutes, stirring frequently.
  3. Stir in 1 teaspoon rosemary, salt, and pepper. Continue cooking 15 to 20 minutes or until onion is a deep golden brown, stirring frequently.
  4. Preheat oven to 400°.
  5. Place pizza crust on 12-inch pizza pan.Top with onion. Add cheese and walnuts; bake 7-10 minutes or until cheese melts.
  6. Remove from oven; top with 1 teaspoon rosemary, reserved bacon and arugula.

Creamy Parmesan Polenta Recipe

INGREDIENTS

  1. 1 1/2cupswater
  2. 1cupyellow cornmeal
  3. 2 1/2cups cannedlow sodium chicken broth
  4. 1cup gratedparmesan cheese
  5. 1/4cupwhipping cream
  6. 2tablespoonsbutter(1/4 stick)

DIRECTIONS

  1. Combine water and cornmeal in small bowl. Bring broth to boil in heavy large saucepan. Gradually add cornmeal mixture, stirring until well blended.
  2. Reduce heat to low and simmer until polenta is very thick, stirring occasionally, about 15 minutes.
  3. Mix in 1/2 cup cheese, cream and butter. Season to taste with salt and pepper. Transfer polenta to serving bowl.
  4. Sprinkle remaining 1/2 cup cheese over.

Crab Rockefeller Recipe

INGREDIENTS

  1. 2tablespoonsbutter
  2. 2tablespoonsflour
  3. 1 1/3cupsmilk
  4. 1/2cupparmesan cheese, grated
  5. 1/2cupfresh spinach, chopped and cleaned
  6. 1/2lbcrabmeat
  7. 1/2cupbreadcrumbs, buttered

DIRECTIONS

  1. Preheat the oven to 375. Melt the butter in a heavy saucepan, on medium heat.
  2. Whisk in the flour and cook for 3 minutes.
  3. Whisk in the milk and bring to a simmer. Cook for 20 minutes.
  4. Add the cheese and stir until well blended.
  5. Add the spinach and crab into individual dishes (that will go into the oven) or a small casserole dish.
  6. Top with the breadcrumbs and bake for 15 minutes. Serve warm.

Mohave Chicken Recipe

INGREDIENTS

  1. 1lbchicken breasts, cleaned
  2. 1cuporange juice
  3. 1cuppineapple juice
  4. 1/4cupwhite wine
  5. 1green bell pepper, diced
  6. 1red bell pepper, diced
  7. 2tablespoonscumin, ground
  8. 1/2teaspooncinnamon, ground
  9. 1/2teaspoonnutmeg, ground
  10. 1tablespoonclarified butter
  11. 1ouncewater
  12. 1teaspooncornstarch, for thickening

DIRECTIONS

  1. Set oven for 400 degrees.
  2. Put a sauté pan over med-high heat with the clarified butter to get hot.
  3. Sprinkle the cumin liberally onto both sides of the chicken.
  4. Once the butter is hot (not smoking) carefully place the chicken into the pan to brownon each side.
  5. Remove the chicken (do not discard the pan) and place onto a baking sheet. Put the sheet into the oven and set your timer for 7-10 minutes, depending on thickness.
  6. Set the sauté pan and back onto med-high heat, there should be some butter left in the pan, if not add a 1/2 tbsp of butter to the pan and allow it to get hot.
  7. Sauté the red and green bell peppers.
  8. When the peppers are browned, add the white wine to the pan. This will de-glaze the pan. Reduce by half.
  9. Add your orange juice, pineapple juice, cinnamon, and nutmeg. Let it simmer until it reduces and thickens a little.
  10. Check the chicken and make sure there is no pink showing. Set aside.
  11. Mix the corn starch and cold water in a bowl and stir this mixture into the sauce, while it’s simmering. When stirred in, your sauce will begin to thicken into a glaze.
  12. Add the chicken breast to the sauce and simmer for another minute to allow the chicken breasts to soak up some of the sauce.
  13. Serve over rice and pour the sauce liberally over the top. Garnish with a few slices of orange and a sprig of a fresh herb like rosemary or basil.

Ring Bologna and Beans Recipe

INGREDIENTS

  1. 1 (16 ounce)ring bologna
  2. 1 (30 ounce)canbaked beans, pref. Busch’s
  3. 1/2onion, diced
  4. 1/4lbbacon, cooked and crumbled (optional)

DIRECTIONS

  1. Preheat oven to 350°F.
  2. In a large casserole dish, mix baked beans, onion and bacon.Add ring bologna.
  3. Cover and bake in oven for 30 minutes, or until heated through.
  4. You could also make this in the microwave on high for 10-12 minutes.
