Monty’s Spinach-Cheese Scones Recipe

INGREDIENTS

  1. 3cupsflour
  2. 1tablespoonbaking powder
  3. 1/3teaspoonsalt
  4. 1tablespoondried basil
  5. 1tablespoondried oregano
  6. 2/3teaspooncayenne
  7. 2/3teaspoongarlic powder
  8. 1teaspoondried parsley
  9. 1/2cupbutter
  10. 1/4cupfrozen spinach, thawed, squeezed dry
  11. 1/2cupcheddar cheese, shredded
  12. 1/2cupparmesan cheese, grated
  13. 3/4cupmilk
  14. 3eggs
  15. 1egg white

DIRECTIONS

  1. Preheat the oven to 350 F .
  2. In a large bowl, blend the dry ingredients.
  3. Cut in the butter until the mixture resembles cornmeal.
  4. Blend in the spinach and cheeses.
  5. In a separate bowl, whip the milk and eggs together.
  6. Stir egg mixture into the spinach mixture until well-combined.
  7. Turn onto a floured surface and knead gently.
  8. Roll the dough out to a one-inch thickness.
  9. Cut into 3-inch rounds.
  10. Place rounds on a greased baking sheet and bush with the egg white.
  11. Bake for 20 minutes.

Scrumptious Salmon Melt Recipe

INGREDIENTS

  1. 2 (6 ounce)canssalmonor tuna
  2. 2eggs, hardboiled, peeled, and chopped
  3. 1/2teaspoongarlic
  4. 1/4cuptartar sauce
  5. 1/4cupmayonnaise, divided
  6. salt and pepper
  7. 4slicesrye bread
  8. 2roma tomatoes, sliced
  9. 4slicescheddar cheeseor American cheese

DIRECTIONS

  1. Preheat the broiler.
  2. Mix salmon, eggs, garlic, salt and pepper, tartar sauce, and all but two tablespoons of the mayonnaise until well blended.
  3. Spread the remaining 2 tbsp of mayonnaise on the rye bread.Divide the salmon mixture on top of the bread.
  4. Top with the tomato and cheese slices.For a prettier presentation, cut the cheese into two triangles.
  5. Place under the broiler for 2-3 minutes to melt the cheese.
