Deep Dish Chicken Pot Pie Recipe

INGREDIENTS

  1. 1lbboneless skinless chicken breasts, and cut into 1-inch pieces
  2. 1/4cupItalian dressing
  3. 4ouncescream cheese
  4. 2tablespoonsflour
  5. 1/2cupchicken broth
  6. 1 (10 ounce)packagemixed vegetables, thawed
  7. 1pie crust

DIRECTIONS

  1. Preheat over to 375 degrees.
  2. Cook the chicken in the Italian dressing 2 minutes.Add the cheese; cook and stir until melted.Add the flour, mix well.Add the broth and vegetables.Simmer 5 minutes.
  3. Pour into a deep dish pie pan.Arrange pie crust over the top and flute the edges.Cut slits in the pie crust to allow steam to escape.
  4. Bake 30 minutes or until crust is golden brown.

Bacon and Maple Grits Puff Recipe

INGREDIENTS

  1. 8slicesbacon
  2. 2cupsmilk
  3. 1 1/4cupswater
  4. 1cupquick-cooking grits
  5. 1/2teaspoonsalt
  6. 1/2cupreal maple syrup
  7. 4eggs

DIRECTIONS

  1. Preheat oven to 350.Grease 1 1/2 quart round casserole or souffle dish.
  2. Cook bacon in large skillet over medium heat; about 7 minutes.Remove bacon to paper towel; set aside.Reserve 2 tablespoons bacon drippings.
  3. Combine milk through salt in medium sauce pan.Bring to a boil over medium heat, stirring frequently.Simmer 2-3 minutes or until mixture thickens; stirring constantly.Remove from heat and stir in syrup and reserved bacon drippings.
  4. Crumble bacon and add to grits mixture.
  5. Beat eggs in medium bowl.Gradually stir small amount of grits mixture into eggs, then stir back ito remaining grits mixture.Pour into prepared casserole.
  6. Bake 1 hour and 20 minutes.Serve immediately with additional maple syrup and fruit.
  7. Note:Puff will fall slightly after removing from oven.
