Mizutaki Recipe

INGREDIENTS

  1. 3lbsbroiler-fryer chickens
  2. chicken stockor water, to cover
  3. salt
  4. Dinner table floor show

  5. 6scallions, cut into 1-inch lengths
  6. 1mediumonion, peeled and sliced thin
  7. 1bunchwatercress, trimmed
  8. Sauce

  9. 1/4cuplemon juice
  10. 1/4cuplight soy sauce
  11. 1/4cup japanesewine(sake)

DIRECTIONS

  1. Buy a whole chicken cut in half and cut into bite size pieces about 1 1/2 inches.
  2. Cover chicken in heavy pan with chickenstock.Add salt to taste bring to boil, reduce heat and then simmer uncovered about 45 minutes.
  3. Prepare the sauce by simply mixing the ingredients.Place in individual small bowls.
  4. You are going to bring your cooking utensils to the table and place over a charcoal or alcohol burner so liquid barely boils.
  5. When everyone is seated begin to add the vegetables to the broth a few at a time.
  6. Serve by spooning a little of the meat into the individual small bowls.Make sure the guest use chopsticks. this is your floor show [grin]
  7. Have them dip the pieces of chicken into the sauce.Eat.

Bethie’s Eggs Recipe

INGREDIENTS

  1. 2teaspoonsoil
  2. 1onion, diced
  3. 3garlic cloves, minced
  4. 1jalapeno, seeded & minced
  5. 1 (15 ounce)candiced tomatoes
  6. 1/2teaspoonsalt
  7. 1/2teaspoonpepper
  8. 1/2tablespoonoregano
  9. 4-6eggs
  10. 1teaspoonchili powder
  11. 1/2cup shreddedcheese

DIRECTIONS

  1. Saute onion in oil over medium heat.
  2. Add garlic & jalapen;, saute until softened.
  3. Add tomatoes, salt & pepper; Cook until reduced & thick.
  4. Crack eggs into a small bowl & set carefully over tomato mixture.
  5. Sprinkle with chili powder.
  6. Cover & cook on low about 5 minutes or until barely set.
  7. Sprinkle on cheese, cover & cook another few minutes until cheese is melted.
