Chicken Saute With Mango Sauce Recipe

INGREDIENTS

  1. Chicken

  2. 1tablespoonolive oil
  3. 4boneless skinless chicken breasts
  4. 1/4cupflour
  5. 1/4teaspoonsalt
  6. 1/4teaspoonpepper
  7. Sauce

  8. 1jalapeno pepper, seeded and minced
  9. 2garlic cloves, minced
  10. 2teaspoonsfresh ginger, minced
  11. 1/2cupreduced-sodium chicken broth
  12. 1/2cuporange juice
  13. 1tablespoonbrown sugar
  14. 1teaspooncornstarch
  15. 1cup dicedmangoes
  16. 2tablespoonslime juice
  17. 2tablespoonscilantro, chopped

DIRECTIONS

  1. Heat olive oil in a large skillet over medium heat.
  2. Trim visible fat from chicken breasts.
  3. Combine flour, salt and pepper in a bowl, dredge each chicken breast in the flour mixture and place into skillet.
  4. Cook until no longer pink in center, 4 to 5 minutes on each side.Transfer to a plate and cover to keep warm.
  5. Add jalapeno, garlic and ginger to the pan, stirring until softened (1 to 2 minutes).
  6. Add broth and stir for an additional minute.
  7. Mix orange juice, brown sugar and cornstarch in a small bowl; add to the pan and stir until thickened (about 4 minutes).
  8. Stir in mango and cook until heated through (about 1 minute).
  9. Remove from heat and stir in lime juice.Spoon sauce over chicken and season with cilantro.

Big Mac Sauce Low Fat Recipe

INGREDIENTS

  1. 1/3cuplow-fat mayonnaise
  2. 2teaspoonsdill pickle relish
  3. 2teaspoonsketchup
  4. 2teaspoonssugar
  5. 2teaspoonsyellow mustard
  6. 1tablespoon finely choppedwhite onions
  7. 1teaspoon finely choppedwhite onions

DIRECTIONS

  1. In a small bowl, combine the mayonnaise, relish, ketchup, sugar, and mustard.
  2. Stir to blend well.
  3. Cover and refrigerate for up to 1 month.
  4. Stir in the onion just before serving.
  5. Makes about 2/3 c, enough for 4 servings.
