INGREDIENTS
- 2cupsmilk
- 1/2cupwhite sugar(I use a little less)
- 3eggs or6 egg yolks
- 1/2teaspoonvanilla
DIRECTIONS
- Scald together milk and sugar.
- Beat eggs until light.
- Gradually whisk a little of the hot milk into eggs.
- When eggs are warm enough that they will not cook when added to the hot milk gradually whisk eggs into the rest of milk.
- Cook over low heat, stirring constantly until custard coats a metal spoon.
- Remove from heat and add vanilla.

INGREDIENTS
- 3baking apples(Macintosh)
- 3/4cupbutter, room temperature
- 1cupsugar
- 3eggs
- 1teaspoonvanilla extract
- 1 1/3cupsflour
- 1teaspooncinnamon
- 1teaspoonbaking powder
- 1/2cupraisins
- 1/4cupdried cranberries
- 1/4cupdried apricots, diced
- powdered sugar, for dusting
DIRECTIONS
- Preheat oven to 350 degrees.
- Peel, core and quarter the apples then cover with water to prevent them from browning.
- Cream together the butter and sugar.
- Add eggs and vanilla extract, beat until well mixed.
- In a seperate bowl, sift together flour, baking powder and cinnamon.
- Add the flour mixture and mix well.
- Fold in the raisins, cranberries, and apricots and gently combine.
- Pour into a greased 9-inch round pan, push the apples into the batter and bake for 40-50 minutes until the sponge is golden brown and coming away from the edges of the pan.
- Dust with powdered sugar to serve.
