Mexi Chicken Stew Recipe

INGREDIENTS

  1. 2-2 1/2lbsboneless skinless chicken breasts, cut into about 1 1/2-inch peices
  2. 1cup dicedonions
  3. 4mediumpotatoes, peeled and cut very small
  4. 1cupfrozen corn, can use canned
  5. 2teaspoonscumin
  6. 1/4-1/2teaspoonchili powder
  7. 1/2teaspoongarlic powder
  8. 1-2tablespoon choppedfresh cilantro
  9. 1 (4 ounce)candiced green chilies
  10. 1 (15 ounce)jarmild salsa, can use hot if you can take it
  11. 1 (15 ounce)cantomato sauce
  12. 1/2cuplight sour cream
  13. 1cup shreddedcheddar cheese
  14. warmflour tortillas (optional)
  15. hotcooked rice (optional)

DIRECTIONS

  1. Place chicken pieces in bottom of the slowcooker.
  2. Add all remaining ingredients EXCEPT the shredded cheese.
  3. Cover and cook on low for about 7 hours.
  4. Stir in the shredded cheese.Cover for about 15 minutes to let melt.STir again.
  5. Serve with warm tortillas or over rice.

Todd’s Pumpkin Roll Recipe

INGREDIENTS

  1. Cake

  2. 1cuppowdered sugar
  3. 3/4cupflour
  4. 1/2teaspoonbaking powder
  5. 1/2teaspoonbaking soda
  6. 1/2teaspoonground cinnamon
  7. 1/2teaspoonground cloves
  8. 1/4teaspoonsalt
  9. 3largeeggs
  10. 1cupgranulated sugar
  11. 2/3cuppumpkin, Canned
  12. 1cup choppedwalnuts
  13. Filling

  14. 1 (8 ounce)packagecream cheese
  15. 1cuppowdered sugar
  16. 6tablespoonsbutter
  17. 1teaspoonvanilla
  18. Topping

  19. 1cuppowdered sugar

DIRECTIONS

  1. For cake, preheat oven to 375*.
  2. Grease jelly roll pan, line with wax paper.
  3. Grease and flour paper.
  4. Sprinkle a thin cotton kitchen towel with powdered sugar.
  5. Combine flour, baking powder, baking soda, cinnamon, cloves & salt in small bowl.
  6. Beat eggs & sugar in large mixer bowl until thick.
  7. Beat in pumpkin.
  8. Stir in flour mixture.
  9. Spread evenly into prepared pan.
  10. Sprinkle with nuts.
  11. Bake for 15 minutes, or until top of cake springs back when touched.
  12. Immediately loosen & turn cake onto prepared towel.
  13. Carefully peel off paper.
  14. Roll up cake & towel together, starting with narrow end.
  15. Cool on wire rack.
  16. For filling, beat cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth.
  17. Carefully unroll cake, remove towel.
  18. Spread cream cheese mixture over & refrigerate at least one hour.
  19. Sprinkle with powdered sugar.
