INGREDIENTS
- 4cupspickling cucumbers, peeled and sliced thin
- 1tablespoonsalt
- 3/4cupwhite vinegar
- 2tablespoonssugar
DIRECTIONS
- Place sliced cucumbers in bowl;sprinkle every few layers with salt.
- Cover cucumbers with a plate and weight them down with a heavy can.
- Let stand at room temperature for 2 hours.
- Drain cucumbers and press out remaining liquid.
- Stir together vinegar and sugar; pour over slices.
- Cover and refrigerate at least 4 hours.

INGREDIENTS
- 1lbground beef
- 1cuponions, chopped
- 1/2cupgreen bell peppers, chopped
- 1mediumgarlic clove, minced
- 1tablespoonchili powder
- 4cupsV8 vegetable juice
- 1cuprice, uncooked
- 1teaspoonsalt
DIRECTIONS
- Brown beef in skillet.
- Add onion, pepper, garlic and chili powder.
- Cook until onion and pepper are tender.
- Add remaining ingredients.
- Bring to boil.
- Cover; cook over low heat 20 minutes or until liquid is absorbed.
- Stir occasionally.
