INGREDIENTS
- 8ouncestomato sauce
- 1/3cupplum jam
- 1tablespooncider vinegar
- 2garlic cloves, minced
- 1/2teaspoonhot sauce
- 1/2teaspoonground ginger
- 1/2teaspoonsalt
- 1teaspoonchili powder
- 1teaspoonground cumin
- 1teaspoonground coriander
- 8chicken drumsticks, skinned
DIRECTIONS
- In a medium saucepan, combine the tomato sauce, jam, vinegar, garlic, hot sauce, ginger and salt.
- Bring to a boil. Reduce to a simmer, cover and cook for 10 minutes.
- Uncover and cook for 5 minutes or until the sauce is thick enough to coat a spoon and the flavors have blended.
- Cool to room temperature. Measure out ½ cup of the sauce and set aside; use the rest as a baste.
- Preheat the broiler. In a small bowl, combine chili powder, cumin and coriander.
- Rub the chicken with the spice mixture.
- Broil the chicken 6 inches from the heat for 3 minutes per side.
- Brush with half of the basting mixture and broil for 5 minutes longer.
- Turn the chicken over, brush with the remaining baste, and broil for 7 minutes longer or until cooked through.
- Serve with the reserved sauce.

INGREDIENTS
- 1 1/2cupsbutter
- 3cupssugar
- 6eggs
- 8ouncescream cheese
- 3cupsflour
- 2teaspoonsbutter flavor extractor vanilla extract(butter is the best)
DIRECTIONS
- Cream butter, sugar, eggs,cream cheese and vanilla or butter extract together.
- Beat in flour.
- Bake @ 325 degrees in a greased and floured loaf pan for 90 minutes.

INGREDIENTS
- 1lbground turkey breast
- 1cupfat-free refried beans
- 3garlic cloves, crushed
- 1jalapeno pepper, seeded and minced
- 2tablespoonstomato paste
- 1tablespoonfresh cilantro
- salt and pepper
DIRECTIONS
- Mix ground turkey and refried beans until combined.
- Add remaining ingredients and mix together.Shape into four equal sized burgers.Cover and let chill 1 hour.
- Grill, broil or fry for 5-6 minutes per side until thoroughly cooked.
- Serve on corn tortilla with guacamole, cheddar cheese, and salsa.

INGREDIENTS
- 4 1/2cupswater
- salt
- 1 1/3cups coarsecornmeal
- 5tablespoonsolive oil
- 3tablespoons gratedparmesan cheese
- 1cupricotta cheese
- 1cupmascarpone cheese
- 1tablespoonbutter
- 1lbfresh shiitake mushrooms, stems removed, cut in 3/4 inch slices
- 2garlic cloves, minced
- 3tablespoonsfresh parsley, chopped
- 1/8teaspoonblack pepper
DIRECTIONS
- In a medium saucepan, bring the water and 1 teaspoon salt to a boil. Add the cornmeal in a slow stream, whisking constantly. Whisk in 3 tablespoons of the oil.
- Reduce heat and allow to simmer, stirring frequently with a wooden spoon, until the polenta is thick, about 20 minutes. Stir in the Parmesan cheese. Remove from heat, but cover to keep warm.
- Meanwhile in a medium bowl, mix together the ricotta, mascarpone and 1/8 teaspoon salt. Put in the refrigerator.
- In a large frying pan, heat the remaining 2 tablespoons of oil with the butter over moderate heat. Add the mushrooms, garlic and ¼ teaspoon salt. Cook, stirring, until the mushrooms are golden, 5-10 minutes. Stir in the parsley and pepper.
- Stir the polenta. It should be thick, but still pourable. If it is too thick, stir in more water. You may need as much as a cup.
- Using a large spoon or a medium ice-cream scoop, put three mounds of the cheese mixture onto four plates. Ladle the hot polenta over the mounds of cheese and top with the mushrooms.

INGREDIENTS
- 1 (8 ounce)packagespaghetti
- 4slicesbacon
- 1/2lbmushrooms, sliced
- 3green onions, chopped
- 1/2green pepper, minced
- 1/2red pepper, minced
- 1 (28 ounce)cantomatoes, crushed
- 2cupscooked chicken, cubed
- 8ouncesheavy cream
- 1cupparmesan cheese, grated
DIRECTIONS
- Break uncooked spaghetti into 2 inch pieces.Put in pot of boiling, salted water 7-8 minutes. Drain.
- Fry bacon till crispy. Remove bacon and in remaining bacon grease saute mushrooms, onions and peppers till soft.
- Add tomatoes, chicken, salt and pepper.
- In a greased 13X 9 inch baking dish layer 1/3 of the cooked spaghetti, then 1/3 of the chicken mixture.
- Repeat until there are 3 layers.
- Pour heavy cream all over.
- Cover with parmesan cheese.
- Bake at 350 for 25-30 minutes.
