Chicken With Plum Barbecue Sauce Recipe

INGREDIENTS

  1. 8ouncestomato sauce
  2. 1/3cupplum jam
  3. 1tablespooncider vinegar
  4. 2garlic cloves, minced
  5. 1/2teaspoonhot sauce
  6. 1/2teaspoonground ginger
  7. 1/2teaspoonsalt
  8. 1teaspoonchili powder
  9. 1teaspoonground cumin
  10. 1teaspoonground coriander
  11. 8chicken drumsticks, skinned

DIRECTIONS

  1. In a medium saucepan, combine the tomato sauce, jam, vinegar, garlic, hot sauce, ginger and salt.
  2. Bring to a boil. Reduce to a simmer, cover and cook for 10 minutes.
  3. Uncover and cook for 5 minutes or until the sauce is thick enough to coat a spoon and the flavors have blended.
  4. Cool to room temperature. Measure out ½ cup of the sauce and set aside; use the rest as a baste.
  5. Preheat the broiler. In a small bowl, combine chili powder, cumin and coriander.
  6. Rub the chicken with the spice mixture.
  7. Broil the chicken 6 inches from the heat for 3 minutes per side.
  8. Brush with half of the basting mixture and broil for 5 minutes longer.
  9. Turn the chicken over, brush with the remaining baste, and broil for 7 minutes longer or until cooked through.
  10. Serve with the reserved sauce.

Abby’s Cream Cheese Pound Cake Recipe

INGREDIENTS

  1. 1 1/2cupsbutter
  2. 3cupssugar
  3. 6eggs
  4. 8ouncescream cheese
  5. 3cupsflour
  6. 2teaspoonsbutter flavor extractor vanilla extract(butter is the best)

DIRECTIONS

  1. Cream butter, sugar, eggs,cream cheese and vanilla or butter extract together.
  2. Beat in flour.
  3. Bake @ 325 degrees in a greased and floured loaf pan for 90 minutes.

Mexican Turkey Burgers Recipe

INGREDIENTS

  1. 1lbground turkey breast
  2. 1cupfat-free refried beans
  3. 3garlic cloves, crushed
  4. 1jalapeno pepper, seeded and minced
  5. 2tablespoonstomato paste
  6. 1tablespoonfresh cilantro
  7. salt and pepper

DIRECTIONS

  1. Mix ground turkey and refried beans until combined.
  2. Add remaining ingredients and mix together.Shape into four equal sized burgers.Cover and let chill 1 hour.
  3. Grill, broil or fry for 5-6 minutes per side until thoroughly cooked.
  4. Serve on corn tortilla with guacamole, cheddar cheese, and salsa.

Polenta With Three Scoops of Cheese and Sautéed Shiitakes Recipe

INGREDIENTS

  1. 4 1/2cupswater
  2. salt
  3. 1 1/3cups coarsecornmeal
  4. 5tablespoonsolive oil
  5. 3tablespoons gratedparmesan cheese
  6. 1cupricotta cheese
  7. 1cupmascarpone cheese
  8. 1tablespoonbutter
  9. 1lbfresh shiitake mushrooms, stems removed, cut in 3/4 inch slices
  10. 2garlic cloves, minced
  11. 3tablespoonsfresh parsley, chopped
  12. 1/8teaspoonblack pepper

DIRECTIONS

  1. In a medium saucepan, bring the water and 1 teaspoon salt to a boil. Add the cornmeal in a slow stream, whisking constantly. Whisk in 3 tablespoons of the oil.
  2. Reduce heat and allow to simmer, stirring frequently with a wooden spoon, until the polenta is thick, about 20 minutes. Stir in the Parmesan cheese. Remove from heat, but cover to keep warm.
  3. Meanwhile in a medium bowl, mix together the ricotta, mascarpone and 1/8 teaspoon salt. Put in the refrigerator.
  4. In a large frying pan, heat the remaining 2 tablespoons of oil with the butter over moderate heat. Add the mushrooms, garlic and ¼ teaspoon salt. Cook, stirring, until the mushrooms are golden, 5-10 minutes. Stir in the parsley and pepper.
  5. Stir the polenta. It should be thick, but still pourable. If it is too thick, stir in more water. You may need as much as a cup.
  6. Using a large spoon or a medium ice-cream scoop, put three mounds of the cheese mixture onto four plates. Ladle the hot polenta over the mounds of cheese and top with the mushrooms.

Not Your Mothers Chicken Tetrazzini Recipe

INGREDIENTS

  1. 1 (8 ounce)packagespaghetti
  2. 4slicesbacon
  3. 1/2lbmushrooms, sliced
  4. 3green onions, chopped
  5. 1/2green pepper, minced
  6. 1/2red pepper, minced
  7. 1 (28 ounce)cantomatoes, crushed
  8. 2cupscooked chicken, cubed
  9. 8ouncesheavy cream
  10. 1cupparmesan cheese, grated

DIRECTIONS

  1. Break uncooked spaghetti into 2 inch pieces.Put in pot of boiling, salted water 7-8 minutes. Drain.
  2. Fry bacon till crispy. Remove bacon and in remaining bacon grease saute mushrooms, onions and peppers till soft.
  3. Add tomatoes, chicken, salt and pepper.
  4. In a greased 13X 9 inch baking dish layer 1/3 of the cooked spaghetti, then 1/3 of the chicken mixture.
  5. Repeat until there are 3 layers.
  6. Pour heavy cream all over.
  7. Cover with parmesan cheese.
  8. Bake at 350 for 25-30 minutes.
