INGREDIENTS
- 3cupsoatmeal
- 1cup choppedwalnuts
- 1cup choppedalmonds
- 1/4cupwhole wheat pastry flour
- 1pinchsea salt
- 1/2teaspooncinnamon
- 1/2cupmaple syrup
- 1/3cupvegetable oil
DIRECTIONS
- Combine first 6 ingredients in a mixing bowl.
- Add 2 last ingredients and mix until well coated.
- Spread on oiled baking tray. Bake for 1 hour at 300°F, stirring every 15 minutes.
- Allow to cool on tray before storing in a jar.

INGREDIENTS
- 2lbsground beef
- 2tablespoonsolive oil
- 2onions, chopped
- 4garlic cloves, minced
- 1 (28 ounce)cantomato sauce
- 3tablespoonstomato paste
- 1 (14 ounce)canRotel tomatoes & chilies
- 2teaspoonscumin
- 2teaspoonscoriander
- 2teaspoonscayenne pepper
- 2teaspoonspaprika
- 4teaspoonschili powder
- 2teaspoonssalt
- 1 (14 ounce)cankidney beans
- 1 (14 ounce)canpinto beans
DIRECTIONS
- Heat the olive oil in a large saucepan and cook the onion and garlic until soft.
- Add the ground beef and saute until brown.
- Add all the spices and cook for a couple of minutes before adding the rest of the ingredients.
- Simmer over low heat for 1 1/2 hours.

INGREDIENTS
- 1/2cupmilk
- 1/2cupsugar
- 2 1/2cupsapple cider(fresh is best)
- 1teaspoonvanilla
- 1pinchsalt
- 2cupsheavy whipping cream
- nutmeg, as garnish
DIRECTIONS
- Whip the cream until stiff.
- In another bowl mix the milk, sugar, cider, vanilla and salt.
- Fold whipped cream into cider mixture, then whisk until frothy.
- This can be stored in the refrigerator and re-whisked before serving.

INGREDIENTS
- 1unbaked pastry shell
- 1cup undilutedevaporated milk
- 3tablespoonsbutter
- 1 1/2cups nestle’ssemi-sweet chocolate bits
- 3eggs, slightly beaten
- 1 1/2cupssugar
- 3tablespoonsall-purpose flour
- 1teaspoonvanilla
- 1 1/2cups choppedwalnuts
- freshlywhipped cream
DIRECTIONS
- Prepare pastry shell with high fluted edge and set aside.
- Combine evaporated milk, butter and chocolate in a small saucepan.Stir over low heat until chocolate has melted; remove from heat.
- Mix eggs, sugar, flour and vanilla and stir into chocolate mixture.Add walnuts.Pour into pastry shell.
- Bake at 375° for 30-35 minute until firm.Cool to room temperature.
- Serve in thin wedges with whipped cream.

INGREDIENTS
- 1/4cupolive oil
- 1/3cupbutter, can use margarine
- 2lbssole, can use flounder
- 1 (16 ounce)cantomato sauce
- 2tablespoonsparsley, chopped
- 1teaspoonoregano leaves
DIRECTIONS
- About 20 minutes before serving, in a 12″ skillet, over medium heat, in hot oil and butter (or margarine).
- Cook fillets 2-3 minutes per side, until fish flakes easily with fork.
- Meanwhile, in medium bowl, stir tomato sauce, parsley, and oregano; pour over fish in the pan;.
- Reduce heat to low and simmer 5 or 6 minutes, occasionally basting fish with sauce.
- Serve from the skillet.
