INGREDIENTS
- 4boneless skinless chicken breasts
- 2eggs, beaten
- 1 1/2cupsflour(depends on size of chicken breasts)
- 1 1/2cupsseasoned bread crumbs(depends on size of chicken breasts)
- 1/2cup shreddedparmesan cheese(the very finely pre-shredded from the grocery store works best, divided)
- 1cuptomato sauce
- 1teaspoonbasil
- 1cup shreddedmozzarella cheese
DIRECTIONS
- Preheat oven to 400 degrees.
- With a mallet pound chicken to 1/4 inch.
- Dredge in flour.
- Coat in egg mixture.
- Shake off excess and coat in bread crumbs mixed with 1/4 cup of the parmesan cheese.
- Place in casserole sprayed or coated with oil.
- Bake 20 minutes.
- Remove from oven.
- Spread some tomato sauce combined with the basil on top of each chicken breast.
- Cover with mozzarella cheese.
- Sprinkle with with the remaining 1/4 cup parmesan cheese.
- Use any remaining tomato sauce to cover the edges of the chicken as they cook faster.
- Place back in oven and cook for 15 to 20 minutes.
- Serve with penne (or your favourite pasta) alfredo and a salad and garlic bread.

INGREDIENTS
- 1/2smallgreen bell pepper
- 1/2smallyellow onion
- 3garlic cloves
- 1lbokra
- 1lbmedium shrimp
- 3tablespoonsvegetable oil
- 1cuplong-grain white rice
- 2cupschicken stock
- 1teaspoonsalt
- ground black pepper
- cayenne pepper
DIRECTIONS
- Mince the bell pepper, onion, and garlic and cut the okra into 1/4 inch thick rounds.
- Peel the shrimp and devein.
- In a large skillet over medium heat, warm the oil. Add the onion and pepper and saute until softened, about 5 minutes. Add the garlic and saute for 2 minutes to release its flavor.
- Add the rice, stir well until the grains are coated, and cook, stirring often, until opaque, 3 to 4 minutes.
- Add the okra, stock, salt, and black and cayenne peppers.
- Bring to a boil, reduce the heat to low, cover, and cook until the rice is tender and the liquid has been absorbed, about 20 minutes.
- Adjust the seasonings. Stir in the shrimp and cook until the shrimp curl and turn pink, 5 to 8 minutes.

INGREDIENTS
- 1tablespoonextra virgin olive oil
- 2garlic cloves, minced
- 2pinchesred pepper flakes(or to taste)
- 1 (15 ounce)candiced fire roasted tomatoes, drained
- 1/4teaspoondried oregano
- salt
- black pepper
- 8 (8 inch)flour tortillas
- 1lb ballsmoked mozzarella cheese, thinly sliced
- 1cupfresh basil, shredded
DIRECTIONS
- Heat a skillet over medium heat; add olive oil to the skillet.
- Add in the garlic and red pepper flakes; cook for 1 minute, then add in the tomatoes.
- Season with oregano, salt, and pepper; simmer the tomatoes for 2 minutes, then remove from heat.
- Heat another skillet over medium heat; add a drizzle of olive oil and a flour tortilla.
- Cover the tortilla with an even layer of sliced cheese; top with ¼ of the tomatoes.
- Scatter ¼ of the basil over the tomatoes.
- Set a second tortilla in place on top; cook for 2 minutes on side one, drizzle the top of the tortilla with a touch of olive oil and carefully flip the pizza-dilla.
- Cook for 2 minutes more, or until golden and crisp on the flip side.
- Remove, cut into 4 pieces, and serve.
- Repeat this with the remaining ingredients to make 3 more pizza-dillas.

INGREDIENTS
- 500gchicken breasts
- 120gbasil pesto
- 2bunchesBroccolini
- 1red onion
- 2garlic cloves
- 100gpine nuts
- 300gpasta
- 1pinchpepper
- 1pinchsalt
- 2tablespoonssour cream (optional)
DIRECTIONS
- cook your choice of pasta (spiral works well).
- roast nuts until golden brown
- crush nuts to a paste.
- add basil.
- crush garlic add to basil mix.
- Chop chicken into bit size cubes
- slice onion
- fry onion and chicken until chicken is golden brown
- cook brocillini for 5 minutes
- Mix everything together
- for a creamier sauce add sour creme to the mix
- serve with cracked pepper on top.

INGREDIENTS
- 1 (8 ounce)containersugar free Cool Whip
- 3cupsskim milk
- 1 (1 7/8 ounce)containercrystal light raspberry powdered drink mix
DIRECTIONS
- Stir together the milk and Crystal Light, making sure all the powder is dissolved.Freeze for 2 hours or partially frozen.
- Spoon the mixture into blender container; cover. Blend on high speed until smooth. Return to bowl. Stir in whipped topping.
- Freeze 4 hours or until frozen.
- To serve, let stand at room temperature 20 minutes to soften.
