Chicken Parmesan Recipe

INGREDIENTS

  1. 4boneless skinless chicken breasts
  2. 2eggs, beaten
  3. 1 1/2cupsflour(depends on size of chicken breasts)
  4. 1 1/2cupsseasoned bread crumbs(depends on size of chicken breasts)
  5. 1/2cup shreddedparmesan cheese(the very finely pre-shredded from the grocery store works best, divided)
  6. 1cuptomato sauce
  7. 1teaspoonbasil
  8. 1cup shreddedmozzarella cheese

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. With a mallet pound chicken to 1/4 inch.
  3. Dredge in flour.
  4. Coat in egg mixture.
  5. Shake off excess and coat in bread crumbs mixed with 1/4 cup of the parmesan cheese.
  6. Place in casserole sprayed or coated with oil.
  7. Bake 20 minutes.
  8. Remove from oven.
  9. Spread some tomato sauce combined with the basil on top of each chicken breast.
  10. Cover with mozzarella cheese.
  11. Sprinkle with with the remaining 1/4 cup parmesan cheese.
  12. Use any remaining tomato sauce to cover the edges of the chicken as they cook faster.
  13. Place back in oven and cook for 15 to 20 minutes.
  14. Serve with penne (or your favourite pasta) alfredo and a salad and garlic bread.

Anne’s Limpin’ Susan Recipe

INGREDIENTS

  1. 1/2smallgreen bell pepper
  2. 1/2smallyellow onion
  3. 3garlic cloves
  4. 1lbokra
  5. 1lbmedium shrimp
  6. 3tablespoonsvegetable oil
  7. 1cuplong-grain white rice
  8. 2cupschicken stock
  9. 1teaspoonsalt
  10. ground black pepper
  11. cayenne pepper

DIRECTIONS

  1. Mince the bell pepper, onion, and garlic and cut the okra into 1/4 inch thick rounds.
  2. Peel the shrimp and devein.
  3. In a large skillet over medium heat, warm the oil. Add the onion and pepper and saute until softened, about 5 minutes. Add the garlic and saute for 2 minutes to release its flavor.
  4. Add the rice, stir well until the grains are coated, and cook, stirring often, until opaque, 3 to 4 minutes.
  5. Add the okra, stock, salt, and black and cayenne peppers.
  6. Bring to a boil, reduce the heat to low, cover, and cook until the rice is tender and the liquid has been absorbed, about 20 minutes.
  7. Adjust the seasonings. Stir in the shrimp and cook until the shrimp curl and turn pink, 5 to 8 minutes.

Inside-Out Pizza-Dilla Margerita Recipe

INGREDIENTS

  1. 1tablespoonextra virgin olive oil
  2. 2garlic cloves, minced
  3. 2pinchesred pepper flakes(or to taste)
  4. 1 (15 ounce)candiced fire roasted tomatoes, drained
  5. 1/4teaspoondried oregano
  6. salt
  7. black pepper
  8. 8 (8 inch)flour tortillas
  9. 1lb ballsmoked mozzarella cheese, thinly sliced
  10. 1cupfresh basil, shredded

DIRECTIONS

  1. Heat a skillet over medium heat; add olive oil to the skillet.
  2. Add in the garlic and red pepper flakes; cook for 1 minute, then add in the tomatoes.
  3. Season with oregano, salt, and pepper; simmer the tomatoes for 2 minutes, then remove from heat.
  4. Heat another skillet over medium heat; add a drizzle of olive oil and a flour tortilla.
  5. Cover the tortilla with an even layer of sliced cheese; top with ¼ of the tomatoes.
  6. Scatter ¼ of the basil over the tomatoes.
  7. Set a second tortilla in place on top; cook for 2 minutes on side one, drizzle the top of the tortilla with a touch of olive oil and carefully flip the pizza-dilla.
  8. Cook for 2 minutes more, or until golden and crisp on the flip side.
  9. Remove, cut into 4 pieces, and serve.
  10. Repeat this with the remaining ingredients to make 3 more pizza-dillas.

Pasta Pesto Recipe

INGREDIENTS

  1. 500gchicken breasts
  2. 120gbasil pesto
  3. 2bunchesBroccolini
  4. 1red onion
  5. 2garlic cloves
  6. 100gpine nuts
  7. 300gpasta
  8. 1pinchpepper
  9. 1pinchsalt
  10. 2tablespoonssour cream (optional)

DIRECTIONS

  1. cook your choice of pasta (spiral works well).
  2. roast nuts until golden brown
  3. crush nuts to a paste.
  4. add basil.
  5. crush garlic add to basil mix.
  6. Chop chicken into bit size cubes
  7. slice onion
  8. fry onion and chicken until chicken is golden brown
  9. cook brocillini for 5 minutes
  10. Mix everything together
  11. for a creamier sauce add sour creme to the mix
  12. serve with cracked pepper on top.

Diabetic Raspberry Sherbet Recipe

INGREDIENTS

  1. 1 (8 ounce)containersugar free Cool Whip
  2. 3cupsskim milk
  3. 1 (1 7/8 ounce)containercrystal light raspberry powdered drink mix

DIRECTIONS

  1. Stir together the milk and Crystal Light, making sure all the powder is dissolved.Freeze for 2 hours or partially frozen.
  2. Spoon the mixture into blender container; cover. Blend on high speed until smooth. Return to bowl. Stir in whipped topping.
  3. Freeze 4 hours or until frozen.
  4. To serve, let stand at room temperature 20 minutes to soften.
