Stetson Chopped Salad Recipe
INGREDIENTS
- 2ouncesisraeli couscous, cooked
- 2ouncesarugula, chopped
- 2ouncesroma tomatoes, diced
- 1 1/2ouncessmoked salmon, diced small
- 1/2ounceasiago cheese
- 1/2ouncepepitas
- 1/2ounceblack currants
- 1ounce super sweetdried whole corn

Pesto Buttermilk Dressing
- 1/2cuppesto sauce
- 1shallot, roughly chopped
- 1cupaioli
- 1cupbuttermilk
- 1/2teaspooncoarse black pepper
- 1/2lemon, juice of
- salt & pepper
DIRECTIONS
- Layer salad ingredients in large bowl.
- To make dressing, add first 3 ingredients to food processor and blend thoroughly.
- With motor running pour in buttermilk.
- Add remaining ingredients to combine.
- Dress salad as desired, tossing to combine.
- Store remaining dressing in refrigerator.
