Stetson Chopped Salad Recipe

INGREDIENTS

  1. 2ouncesisraeli couscous, cooked
  2. 2ouncesarugula, chopped
  3. 2ouncesroma tomatoes, diced
  4. 1 1/2ouncessmoked salmon, diced small
  5. 1/2ounceasiago cheese
  6. 1/2ouncepepitas
  7. 1/2ounceblack currants
  8. 1ounce super sweetdried whole corn
  9. Pesto Buttermilk Dressing

  10. 1/2cuppesto sauce
  11. 1shallot, roughly chopped
  12. 1cupaioli
  13. 1cupbuttermilk
  14. 1/2teaspooncoarse black pepper
  15. 1/2lemon, juice of
  16. salt & pepper

DIRECTIONS

  1. Layer salad ingredients in large bowl.
  2. To make dressing, add first 3 ingredients to food processor and blend thoroughly.
  3. With motor running pour in buttermilk.
  4. Add remaining ingredients to combine.
  5. Dress salad as desired, tossing to combine.
  6. Store remaining dressing in refrigerator.

Tomato Feta Salad – Barefoot Contessa Recipe

INGREDIENTS

  1. 4pintsgrape tomatoes
  2. 1 1/2cups small-dicedred onions(2 onions)
  3. 1/4cup goodwhite wine vinegar
  4. 6tablespoonsolive oil
  5. 1tablespoonkosher salt
  6. 1teaspoonfresh ground black pepper
  7. 1/4cup choppedfresh basil leaves
  8. 1/4cup choppedfresh parsley leaves
  9. 1 1/2lbsfeta cheese

DIRECTIONS

  1. Cut the tomatoes in half and place them in a large bowl.
  2. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well.
  3. Dice the feta in 1/2 to 3/4-inch cubes, crumbling it as little as possible.
  4. Gently fold it into the salad and serve at room temperature.
