1-2-3 Hot Chocolate Recipe

INGREDIENTS

  1. 6cups coldmilk
  2. 1 (3 ounce)boxJell-O chocolate pudding and pie filling(4-serving size box)
  3. 6tablespoonsCool Whip (optional)

DIRECTIONS

  1. Pour milk into a medium saucepan. Add dry pudding mix.
  2. Beat with wire whisk for 1 minute.
  3. Bring to a simmer on medium heat, stirring frequently with wire whisk.
  4. Pour evenly into 6 mugs, top with whipped topping.

Garlic Pita Chips Recipe

INGREDIENTS

  1. 1 (8 ounce)packagewhole wheat pita bread
  2. 1/2cupfresh parsley, chopped
  3. 2egg whites, lightly beaten
  4. 1/4cupolive oil
  5. 3garlic cloves, finely chopped
  6. 1/2teaspoonkosher salt

DIRECTIONS

  1. Preheat oven to 300 degrees.
  2. Lightly coat 2 or 3 baking sheets with nonstick cooking spray.
  3. Cut each pita into 4 wedges, then gently cut or pull each wedge apart, to form a total of 64 triangles.
  4. Combine parsley, egg white, olive oil, garlic and salt in small bowl.
  5. Spoon some of the parsley mixture over rough side of each triangle.
  6. Place triangles, parsley side up, in single layer on baking sheets.
  7. Bake in preheated oven for 15 to 18 minutes or until edges of triangles are toasted and parsley topping is set.
  8. Cool chips on baking sheets on wire racks.

Easy Apple Raisin Cake Recipe

INGREDIENTS

  1. 3 1/2cupsall-purpose flour
  2. 1 1/2cupsbrown sugar, packed
  3. 2teaspoonsground cinnamon
  4. 2teaspoonsbaking soda
  5. 1/2teaspoonsalt
  6. 1 1/2cupsapplesauce
  7. 1cupmilk
  8. 2/3cupbutter, melted
  9. 2teaspoonslemon juice
  10. 1cupgolden raisins

DIRECTIONS

  1. In a 9″ x 13″ ungreased rectangular cake pan, stir together the flour, brown sugar, cinnamon, baking soda and salt.
  2. Add the applesauce, milk, melted butter and lemon juice all at once.
  3. Beat with a fork until well combined.
  4. Stir in the raisins.
  5. Spread the batter evenly in the pan.
  6. Bake in a preheated 350 degree F oven 45 to 50 minutes or until a wooden pick inserted in the centre comes out clean.
  7. Cool.
  8. Dust with icing sugar, if desired, and cut into squares.

Flax & Oat Waffles Recipe

INGREDIENTS

  1. 4cupsquick oats
  2. 4cupsbread flour
  3. 1cupflax seed meal
  4. 1/2cupground pecans
  5. 5teaspoonsbaking soda
  6. 3teaspoonsbaking powder
  7. 5teaspoonssalt
  8. 1/2cupsugar
  9. 8eggs
  10. 8cupsbuttermilk
  11. 1/2cupbutter
  12. 1/4cupflax seed oil
  13. 4teaspoonsvanilla

DIRECTIONS

  1. grind oats.
  2. grind pecans.
  3. sift together all dry ingredients.
  4. beat eggs, buttermilk and vanilla then add melted butter & oil.
  5. gradually add dry ingredients to just moistened.
  6. let mixture set for 15 minutes.
  7. bake in waffle iron.

Fruit and Cheese Mini-Snacks Recipe

INGREDIENTS

  1. 2ounceslow-fat cheddar cheese, shredded(at room temperature)
  2. 2ounceslight cream cheese
  3. 4dropsred pepper sauce
  4. 1 1/2cupsdried fruit(your choice such as apple, pineapple, apricots, etc)
  5. 1/2cupfresh parsley, chopped

DIRECTIONS

  1. Chop/dice dried fruit to small uniform pieces.
  2. Beat together cheddar cheese, cream cheese and red-pepper seasoning in small bowl until blended, about 1 minute.
  3. Stir in dried fruits with wooden spoon.
  4. Using 1 level measuring tablespoon, form mixture into balls, rolling between palms of your hands.
  5. Roll balls in chopped parsley.
  6. Serve with crackers, veggies, anything you’d like or just pop them into your mouth one by one!
  7. The snacks can be refrigerated for up to 2 weeks in an air-tight container.
