INGREDIENTS
- 1 1/4lbssalt cod fish
- 5cups unsaltedpotatoes(riced or finely mashed)
- 1/2cup finely choppedonions
- 1/3cup finely choppedfresh parsley
- 4teaspoonslemon juice
- 1/4teaspoonnutmeg
- 1/4teaspoonpepper
- 3eggs, beaten
- oil(for deep frying)
DIRECTIONS
- Rinse and soak the cod12 hours or overnight in several changes of cold water.
- Drain, place in a large saucepan.Cover with cold water and bring to a boil.Simmer until fish flakes easily when poked with a knifeabout 15 minutes.
- Drain , cool and remove skin and bones.
- Shred finely in the food processor making sure ther are no chunks.
- Combine cod, potatoes, onion, parsley , lemon juice, nutmeg and pepper. taste and adjust seasoning.
- Stir in eggs to form a firm , malleable mixture.
- Using a dessert spoon scoop up a heaping spoon full of cod mixture.With a second dessert spooncupped over the first press and form a rounded oval allowing excess to fall back into bowl.Place on a tray.continue with rest of mixture.
- In 3 inches of oil heated to 375F deep fry ovals about 8 at a time till golden and crisp. Drain immediately.
- Serve with lemon and olives.

INGREDIENTS
- 2 (28 ounce)canswhole tomatoes
- 1mediumonion, chopped finely
- 2tablespoonsbrown sugar
- 6ouncestomato paste
- 2cupschicken broth(or vegetable if you prefer)
- 5garlic cloves, pressed
- 1/4teaspoonallspice
- 1/4cupfresh basil, shredded(about 10 large leaves)
- 5ouncesevaporated milk
- salt and pepper, to taste
DIRECTIONS
- Preheat oven to 450.
- Drain and reserve juice from tomatoes (there should be about 3 cups of juice).
- Line a baking sheet with aluminum foil and spray with cooking spray.
- Place tomatoes in a single layer on foil.
- Sprinkle with brown sugar and chopped onion.
- Bake for 30-40 minutes until slightly brown and tomatoes appear dry.
- Dice tomatoes, careful of the hot juice!
- In a crock pot or large pot, combine roasted tomato mixture, reserved juice, tomato paste, chicken broth, garlic, and allspice.
- If using a pot, simmer for 4-6 hours over low heat.
- In a crock pot, cook for 8 hours on low.
- Add basil, evaporated milk, salt, and pepper,
- Turn heat on crock pot up to high or continue to simmer in pot for additional 30 minutes.Enjoy!

INGREDIENTS
- 12ounceskabocha squash
- 2tablespoonsplain flour
- 1tablespooncornstarch
- 2teaspoonssuperfine sugar
- 1/4teaspoonsalt
- 1/4teaspoonground cinnamon
- 1 1/2tablespoonswater
- 2egg yolks
DIRECTIONS
- Cut off hard part from top and bottom of Kobocha then cut into 3 to 4 wedges.Scoop out the seeds and cut into chunks.
- Steam in steamer, covered, for 15 minutes over med heat then use a chopstick and see if it can be pushed into center easily.Remove and leave covered for 5 minutes.
- Remove skin.Mash flesh and push thru sieve or process in food processor.Transfer to mixing bowl and add rest of ingredients.Mix well.
- Roll out makisu sushi mat as if you were making sushi.Wet muslin slighly and lay on mat.Spread mix on evenly.Hold nearest end and tightly roll up to other end.Close both other ends by rolling up or folding over muslin.
- Put roll in steamer for 5 minutes.Remove from heat and let rest 5 more minutes.
- Open the makisu when roll has cooled.Cut into 1 inch thick slices and serve cold on plates with thinly sliced nashi and kaki if desired.

- 1/4cupcornstarch
- 1 1/2cupswater
- 3ouncesstrawberry gelatin
- 10ouncesfrozen strawberries or1 cupfresh strawberries
DIRECTIONS
- Boil togethersugar, cornstarch and water til thick and clear.
- Add jell-o and cool.
- Add frozen or fresh strawberries.
- place in graham cracker crust; chill till firm.

INGREDIENTS
- 3 1/3cups peeled and finely shreddeddaikon radishes
- 1/3cup finely shreddedcarrots
- 1 1/2teaspoonssalt
- 1/4cuprice vinegaror white vinegar
- 3tablespoonsgranulated sugar
- 1teaspoonsesame seeds, toasted
DIRECTIONS
- Toss radish, carrot and salt together in large bowl.Let stand for 10 minutes.Knead until soft.Squeeze dry.
- Combine rice vinegar and sugar in small cup.Stir until sugar is dissolved.Pour over radish mixture.Toss until well coated.
- Sprinkle with sesame seeds.Makes 2 cups.
