INGREDIENTS
- 4eggs
- 1/2cupself-rising flour
- 1onion, finely chopped
- 1/4cup choppedparsley
- 2cupsmilk
- 200gtunaor salmon
- 1/2cup gratedtasty cheese
- 1pinchground pepper
DIRECTIONS
- In a large bowl beat together eggs, milk, flour.
- Stir in the rest of the ingredients.
- Pour into 30cm pie plate and bake at 190 deg C until the top is brown - ususally about 35 to 40 minutes.

INGREDIENTS
- 1cupall-purpose flour(I use unbleached)
- 3/4cupwhole wheat flour
- 3/4cupsugar
- 1/4cupground flaxseedor wheat germ
- 1teaspoonbaking powder
- 1teaspoonpumpkin pie spiceor cinnamon
- 1/2teaspoonbaking soda
- 1/2teaspoonsalt
- 3largeeggs, beaten
- 1/2cupunsweetened applesauce
- 1/2cupcanola oil
- 2largegolden delicious apples, coarsely grated(about 2 cups, packed, I used 3 medium apples and peeled them first)
- 1/3cupbutterscotch chips
DIRECTIONS
- Whisk together flours, sugar, flaxseed, baking powder, pumpkin pie spice, baking soda, and salt in a large bowl.
- Whisk together eggs, applesauce, and oil in another bowl. Stir in apples until well-blended.
- Pour liquid ingredients over dry ingredients and stir just until moistened. Stir in butterscotch chips.
- Pour batter into a 13×9 pan that has been coated with cooking spray. Smooth with a rubber spatula.
- Bake in a preheated 350 degree oven about 35 minutes, or until the top is golden and a toothpick inserted in the middle comes out clean. (Watch carefully, mine was done at 26 minutes).
- Cool on a wire rack before cutting.

INGREDIENTS
- 5largerusset potatoes
- 1teaspoonolive oil
- 1/2teaspoonpaprika
- 1/4teaspoonsalt
- 1/8teaspooncayenne pepper
- 2tablespoonsparmesan cheese, freshly grated
DIRECTIONS
- Preheat oven to 400°F
- Scrub the potatoes. With a paring knife, remove skin and about 1/8 inch of the flesh in long 1- to 2-inch-wide strips (Reserve peeled potatoes for another use.)
- Toss potato skins with oil, paprika, salt and cayenne.
- Place in a single layer on a lightly oiled baking sheet; sprinkle with Parmesan.
- Bake until tender and golden, about 25 to 30 minutes.
- Serves 4.

INGREDIENTS
- 60gbutter
- 4slicesrindless bacon, chopped
- 8mushrooms, sliced
- 600gcabbage, shredded
- 1spring onion(scallion)(optional)
- black pepper
DIRECTIONS
- Chop bacon, slice mushrooms and shred cabbage.
- Slice spring onion (scallion) if using. Set aside.
- Heat butter on medium heat in a large fry pan (skillet).
- Add bacon and mushrooms and cook for 1 minute.
- Add the cabbage and cook for a further 4 or 5 minutes until wilted.
- Stir in spring onion, if using, and season with black pepper.

INGREDIENTS
- 2cupsgreen lentils
- 8cupswateror vegetable broth
- 2garlic cloves, pressed
- 1 (14 ounce)candiced tomatoes with juice
- 2cupstiny pasta, cooked al dente
- 1tablespoondried parsley
- 1/2teaspoon crushedthyme
- 1/2teaspoon crushedrosemary
- 1/2teaspoonbasil
- salt
- pepper
DIRECTIONS
- In large pot, combine lentils and water (or broth) and cook covered until tender (about 40 minutes).
- Stir in garlic, tomatoes, parsley, thyme, rosemary, and basil.
- Let simmer, covered, another 20 minutes.
- Salt and pepper to taste.
- Add cooked pasta.
- Stir and serve.
