Ww 2 Points Santa Fe Salad With Chili-Lime Dressing Recipe

INGREDIENTS

  1. 6tablespoonsreduced-calorie mayonnaise
  2. 3tablespoonsfresh cilantro, chopped
  3. 3tablespoonswater
  4. 1mediumscallion, minced
  5. 1 1/2tablespoonsfresh lime juice
  6. 2teaspoonssugar
  7. 1/2teaspoonchili powder
  8. 1 (15 ounce)canblack beans, rinsed and drained
  9. 1 1/2cups cookedcorn kernels
  10. 2cupsgrape tomatoes
  11. 1mediumsweet red pepper, cut into thin strips
  12. 8cupsromaine lettuce, cut into thick shreds

DIRECTIONS

  1. To make dressing, whisk together mayo, cilantro, water, scallion, lime juice, sugar and chili powder in small bowl until smooth.
  2. Transfer to a jar or a plastic container with a tight fitting lid and refrigerate until ready to use.
  3. In a large bowl, layer remaining ingredients in order listed.
  4. Cover and refrigerate.
  5. To serve, spoon salad ingredients into a bowl.
  6. Shake dressing and then drizzle over salad, toss well to coat.

Ww 0 Points Cajun-Style Stuffed Mushrooms Recipe

INGREDIENTS

  1. olive oil flavored cooking spray
  2. 1lbbutton mushrooms, about 24
  3. 1teaspoonolive oil
  4. 1/4cup choppedonions
  5. 1/4cup choppedsweet red peppers
  6. 10ouncesfrozen chopped spinach, thawed
  7. 2 1/2sliceswhole wheat bread, finely chopped into breadcrumbs
  8. 1teaspooncajun seasoning
  9. 1/4teaspoonground turmeric

DIRECTIONS

  1. Preheat oven to 350 degrees.Lightl coat a jelly roll pan with cooking spray.
  2. Remove msuhroom stems from caps and finely chop them, reserving and setting aside caps.
  3. Heat oil in large skillet over high heat.Saute mushroom stems, onion, pepper and spainch until tender, about 5 minutes.
  4. Remove skillet from heat and stir in remaining ingredients until well-combined.
  5. Stuff each mushroom cap with 2 T. of filling mixture.Place mushrooms, stuffed sides up, on jellyroll pan.
  6. Bake, uncovered, 15 minutes and serve warm.Points figured for 2 mushroomss per serving.

Red Room Martini Recipe

INGREDIENTS

  1. 4ouncesraspberry vodka(Stoli Razberi)
  2. 1ouncealize red passion liqueur
  3. sour mix

DIRECTIONS

  1. Add vodka and Alize Red passion to a shaker half filled with ice.
  2. Add a splash of sour mix.
  3. Shake vigorously and strain into a chilled cocktail glass.

Ten-Minute Baked Halibut Recipe

INGREDIENTS

  1. 1/2cupbutter, melted
  2. 1/2cupolive oil
  3. 1 (1 7/8 ounce)package lipton savoryherb with garlic soup mix
  4. 2 1/2lbshalibut fillets(or other firm white-fleshed fish)
  5. 1cupdry breadcrumbs
  6. 1/2cup freshly gratedparmesan cheese

DIRECTIONS

  1. Preheat oven to 425°.
  2. In a small bowl, combine the melted butter, oil, and 2 tablespoons soup mix; pour 2 tablespoons of the flavored butter into a 13x 9 inch baking dish; place the halibut in the baking dish and pour all but 2 tablespoons of the flavored butter over the fish.
  3. In another small bowl, combine the rest of the soup mix with the breadcrumbs and cheese; toss the breadcrumb mixture with the remaining 2 tablespoons of flavored butter.
  4. Spread the breadcrumb mixture over the fish fillets.
  5. Bake the fish for 10 minutes; to check for doneness, slash the fish at the thickest part; if it is still translucent, cook for 2-3 more minutes, until the fish is white all the way through.
