INGREDIENTS
- 1/2teaspoontoasted sesame oil
- 2teaspoonshoney
- 1tablespoon mincedgarlic
- 1lbfresh green beans(ends trimmed)
- 1tablespoonolive oil
- 4teaspoonssesame seeds
DIRECTIONS
- Combine sesame oil, honey & garlic in small bowl & set aside.
- Drizzle green beans with olive oil and sprinkle with salt to taste, and toss.
- Line a rimmed baking sheet with foil and roast beans in 450 degree oven for 10 minutes.
- remove from oven and spoon honey/garlic mixture over beans, toss and return to oven for 10-12 minutes (until beans are dark and begin to shrivel).
- Toss with sesame seeds and serve.

INGREDIENTS
- 3/4lbmedium shrimp, shelled and deveined
- 2tablespoonscornstarch
- 1egg white, lightly beaten
- 1/3cupvegetable oil
- 1/2cup skinlessroasted peanuts
- 1/4teaspooncrushed red pepper flakes
- 6ouncesChinese pea pods
- 1 (8 ounce)cansliced water chestnuts, drained
- 3scallions, chopped
- 2garlic cloves, minced
- 1teaspoonchili paste
- 1/4cupsoy sauce
- 3tablespoonsdry sherry
- 1teaspoonred wine vinegar
- 2teaspoonssugar
- 1/2cupchicken broth
- 1tablespooncold water
DIRECTIONS
- In a medium bowl, combine the shrimp with 1 tablespoon cornstarch and egg white.
- Toss to mix thoroughly.
- In a skillet, heat oil over high heat until hot. Add shrimp and stir-fry until pink and loosely curled, 1-2 minutes.
- With a slotted spoon, remove shrimp to a bowl.
- Add peanuts to oil in skillet and fry for 30 seconds.
- Remove and drain on paper towels.
- Drain off and discard all but 2 tablespoons of oil from the skillet.
- Add hot pepper flakes, pea pods, water chestnuts, scallions and garlic.
- Stir-fry over medium-high heat for 2 minutes.
- Return shrimp to the pan and stir-fry for 1 minute longer.
- Mix in chili paste, soy sauce, sherry, red wine vinegar, sugar and chicken broth until well blended.
- Dissolve remaining cornstarch in cold water and add to pan.
- Cook over high heat, stirring, until sauce boils and thickens, about 2 minutes.
- Add peanuts and mix well. Serve immediately.

INGREDIENTS
- 1largeyukon gold potato, peeled
- 1mediumapple, cored and quartered
- 4teaspoonsdried onion flakes
- 1largeegg, beaten
- 1/4teaspoonsalt
- 1/4teaspoonpepper
- 1/4teaspooncinnamon
- 3dashescooking spray(3 sprays)
- 1/2cupfat free sour cream
DIRECTIONS
- Shred potato and apple into medium sized bowl using the finest holes of a box grater or food processor, stir in onion.
- coat a very large nonstick skillet with cooking spray, heat over medium-high heat.
- Drop potato mixture by tablespoonsfuls into skillet and flatten each with the back of a spoon to make 20 2″ latkes. (leave atleast 1 inch between each).
- Cook latkes until golden on first side, abotu 3 minutes, and gently flip with spatula.
- Cook until toher side is golden, about 3-4 minutes more.
- Carefully remove from pan onto serving plate, cover to keep warm and repeat with remaining batter.
- Top latkes with sour cream before serving.
- Serving size is 2 latkes and 2 t. of sour cream.
