Chicken Ranch Dip Recipe

INGREDIENTS

  1. 2 (5 ounce)canschickens(well drained)
  2. 2 (8 ounce)packagescream cheese, softened
  3. 1cuppeppercorn ranch dressing(not low-fat)
  4. 1-2teaspoonfresh garlic
  5. 1/4cup finely choppedonions
  6. 1/4cuphot sauce(or use more as desired)
  7. 2cups gratedcheddar cheese(or to taste)
  8. choppedgreen onions
  9. corn chips(any amount desired)

DIRECTIONS

  1. In a small bowl shred or coarsly chop the chicken.
  2. In a large bowl mix together softened cream cheese with ranch dressing, garlic, onion and hot sauce until well combined.
  3. Add in the chicken; mix lightly to combine.
  4. Season with salt or seasoned salt if desired, adjusted the hot sauce to taste.
  5. Place in a greased baking dish.
  6. Bake at 350 degrees for 25 minutes or until heated through.
  7. Remove from oven and top with grated cheddar cheese; return to oven for 8-10 minutes.
  8. Sprinkle with chopped green onions and serve hot or warm with corn chips.
  9. Delicious!

Healthy Mofo Pancakes Recipe

INGREDIENTS

  1. 1cupwhole wheat flour
  2. 2teaspoonsbaking powder
  3. 1tablespoonsugar
  4. 1pinchsalt
  5. 1teaspooncinnamon
  6. 1pinchcloves
  7. 1/4pinchnutmeg
  8. 1cupwhole milk
  9. 1egg
  10. 2teaspoonsoil
  11. 1/4cupapplesauce(make it a little shy of a full quarter cup)

DIRECTIONS

  1. The wheat germ I use is 70% germ, 30% bran.
  2. Mix all dry ingredients.
  3. Mix wet ingredients in a separate bowl.
  4. Fold wet into dry. Very important to mix gently.
  5. Let sit while your pan gets hot.
  6. Cook per usual.

Crock Pot Black Beans and Rum Recipe

INGREDIENTS

  1. 1lbdried black beans
  2. 1ham hock
  3. 1smallonion
  4. 2wholecloves
  5. 1garlic clove, minced
  6. 1tablespoonparsley, chopped
  7. 1bay leaf
  8. 1/2teaspoonthyme
  9. 1cupwater
  10. 2tablespoonsflour
  11. 1/4cuprum
  12. 1/2teaspoonTabasco sauce
  13. sour cream

DIRECTIONS

  1. Place beans in slow cooker and add next 7 ingredients.
  2. Cook on low for 8 hours.
  3. Remove ham and bay leaf. Cut meat off the bone; return to pot.
  4. In a bowl, combine flour, rum and Tabasco sauce. Stir into beans and blend well.
  5. Serve with sour cream.

Tita Aida’s Mocha Cake Recipe

INGREDIENTS

  1. Cake

  2. 7eggs
  3. 1teaspooncream of tartar
  4. 1/2teaspoonsalt
  5. 1cupsugar
  6. 3teaspoonsinstant coffee
  7. 1/3cupwater
  8. 1cupall-purpose flour(lightly spooned into measuring cup and leveled off)
  9. 2ounces gratedsemisweet chocolate
  10. 2teaspoonsvanilla
  11. Frosting

  12. 2cupswhipping cream
  13. 1/3cuppowdered sugar
  14. 2ounces gratedsemisweet chocolate
  15. 2teaspoonsinstant coffee

DIRECTIONS

  1. Making the cake:.
  2. Preheat oven to 325.
  3. Separate egg yolk from white.Put egg white in a large bowl, egg yolk in a small bowl.
  4. In the large bowl, beat egg white, cream of tartar, and salt until soft peaks form.Gradually add 1/2 cup sugar - beat till stiff peaks form.Set aside.
  5. In the small bowl, beat egg yolks until thick and lemon colored; gradually add remaining 1/2 cup sugar, then beat again.
  6. Dissolve 3 teaspoons instant coffee in 1/2 cup water.Blend coffee mixture, flour, 2 oz. grated chocolate & 2 teaspoons vanilla into egg yolk mixture. Beat 1 minute at low speed until blended.
  7. Fold egg yolk mixture into egg white mixture.
  8. Pour into ungreased 10 inch tube pan. Bake 325 deg. for 60 minutes.Cool.
  9. Making the frosting:.
  10. In a large bowl, beat whipping cream until slightly thickened.
  11. Set aside 3 teaspoons grated chocolate.
  12. Add remaining chocolate, coffee, and powdered sugar to whipping cream.Beat until firm peaks form but DO NOT OVERBEAT.
  13. Once cake has cooled, use a spatula to apply frosting.Sprinkle remaining 3 teaspoons grated chocolate on top for garnish.

Meat Ravioli Casserole Recipe

INGREDIENTS

  1. 1 (25 ounce)bag frozenmeat ravioli, thawed
  2. 1 (4 1/2 ounce)jarsliced mushrooms, drained
  3. 1mediumzucchini, cut into 1/8 in. slices(about 1 cup)
  4. 1 (26 ounce)jarroasted tomato and garlic pasta sauce
  5. 1cup shreddedswiss cheese(4 oz.)
  6. 1/4teaspoonitalian seasoning

DIRECTIONS

  1. Heat oven to 350 degrees.
  2. In a large bowl, mix all ingredients except cheese and Italian seasoning.
  3. Spoon into ungreased 8 inch-square (2-quart)glass baking dish.
  4. Sprinkle with cheese and Italian seasoning.
  5. Bake 40 to 50 minutes or until thoroughly heated and bubbly.
