INGREDIENTS
- 1cuplight vanilla soy milk
- 1banana, frozen
- 1/2cupstrawberry slices, frozen
- 1tablespoonlight chocolate syrup
DIRECTIONS
- Measure all your ingredients into a blender.
- Blend until well mixed.
- Serve right away with a straw, if desired.
- You can add a little chocolate sauce on top for presentation, if desired.

INGREDIENTS
- 4tablespoonsolive oil
- 36ouncesstewing beef, cut into large cubes and seasoned with salt and ground black pepper
- 1 1/4cupsprunes, pitted
- 1dozenshallots, peeled
- 3largecarrots, peeled and sliced thickly
- 2 1/4cupsred wine
- 3/8cuppine nuts, toasted or choppedfresh parsley
- salt and black pepper
- 1glassred wine
DIRECTIONS
- Heat the oil in a lidded casserole over medium heat, and brown beef on all sides.
- Add the rest of the ingredients except for the pinenuts or parsley.
- Cover and cook over a low heat for 2 hours or until the meat is tender, stirring occasionally.Flavor deepens if served the day after cooking. When reheated, serve sprinkled with toasted pine nuts or parsley.

INGREDIENTS
- 1mediumonion, chopped and satueed until tender
- 2cupscooked chicken, diced
- 1 (14 1/2 ounce)canRo-Tel tomatoes and onions, and chilies or verychunky salsa
- 1 (28 ounce)canred enchilada sauceor green enchilada sauce
- 12ounces shreddedcheddar cheese
- 12corn tortillas
DIRECTIONS
- Satuee onion, then add chicken and Rotel, combine thoroughly.
- Dip a tortilla in sauce, place in 13×9″ baking dish.
- Put approximately 3 T. of chicken mixture and 2 T. of cheese on one end of tortilla, roll up tightly.
- Repeat with remaining tortillas ro fill pan up.
- Top with remaining sauce and a small amount of remaining cheese.
- Cover with foil and bake 20 minutes.
- Remove foil, top with remaining cheese and bake additional 10 minutes or until heated through.
- Serve with optional garnishes (chopped black olives, tomatoes, shredded lettuce, sour cream, guacamole, salsa, shredded cheese) but be sure to add extra points.

INGREDIENTS
- 1 (1 1/4 ounce)envelopesugar-free hot cocoa mix
- 1tablespoonunsweetened cocoa
- 3-4dashesbutter-flavored cooking spray(3-4 spritzes)
- 8cups plain airpopped popcorn
DIRECTIONS
- In small bowl, combine cocoa mix and cocoa powder.
- Place popcorn in a very large bowl or bag.
- Spray with nonstick cooking spray, tossing as needed.
- Add cocoa mixture and toss to coat.
- Store in air-tight container.

INGREDIENTS
- 6pork loin chops, at least 1 1/2 inches thick
- 1/2cup choppedcelery
- 1mediumapple, chopped
- 2tablespoonsbutter
- 1egg, beaten
- 1 1/2cups toasted cubedraisin bread(2 1/2 slices bread)
- 1/2teaspoon finely shreddedorange peel
- 1orange, peeled, sectioned and chopped(1/3 cup)
- 1/4teaspoonsalt
- 1/4teaspoonground cinnamon
- 1tablespooncooking oil
DIRECTIONS
- Cut a pocket in each pork chop. Season cavity with a little salt and pepper. Cook celery and apple with butter in a small saucepan until tender, but not brown.
- Combine egg, bread cubes, orange peel, chopped orange, salt and cinnamon.
- Pour cooked celery and apple over bread cube mixture and toss lightly.
- Spoon about 1/3 cup of the stuffing into each pork chop. Fasten pockiet openings with wooden picks.
- In a large skillet brown the chops in hot cooking oil, 3 at a time, for 10 to 15 minutes.
- Plece chops in a 13×9x2-inch baking dish.
- Cover and refrigerate for 3 to 24 hours.
- Before serving, bake, covered, in a 350 degree oven for 65 to 70 minutes or until meat is tender. Remove the picks and garnish with orange slices.
