Macaroon Creams Recipe

INGREDIENTS

  1. 20almond macaroons
  2. 1cupmilk
  3. 25 regular-sizemarshmallows
  4. 2cupswhipping cream
  5. 1/2teaspoonalmond flavoring
  6. cherries(to garnish)

DIRECTIONS

  1. Toast macaroons at 350° until they are crunchy and well dried out, about 20 minutes.
  2. While they’re in the oven, dissolve marshmallows in the milk over a low heat, stirring often.Cool.
  3. Grate macaroons into fine crumbs.
  4. Add to dissolved marshmallow mixture.
  5. Whip cream and add almond flavoring.
  6. Stir crumb-marshmallow mixture into whipped cream.
  7. Place baking cups (I prefer the foil ones) on a cookie sheet and using a ladle, fill the cups and freeze either in foil or plastic bag.
  8. Remove from freezer about 20 minutes before serving.
  9. Garnish with cherries.

Apple Cinnamon Cake Recipe

INGREDIENTS

  1. 1 (15 ounce)boxyellow cake mix
  2. 1egg
  3. 1/2cupwater
  4. 1/4cupvegetable oil
  5. 2tablespoonsbutter
  6. 1apple, diced
  7. 1teaspooncinnamon
  8. 1/4cupsugar

DIRECTIONS

  1. Preheat oven to the directions on the cake box.
  2. Mix cake mix to direction on box. Butter a 9 by 9 inch cake pan.
  3. Arrange diced apple on top of the cake and sprinkle liberally with cinnamon and sugar.
  4. Bake 20-25 minutes or until cake is done. Serve warm.

Crock Pot Chicken Cacciatore Recipe

INGREDIENTS

  1. 3lbsbroiler-fryer chickens, cut up
  2. 3tablespoonsbutter
  3. 1smallonion, thinly sliced
  4. 2garlic cloves, minced
  5. 1 (16 ounce)candiced tomatoes
  6. 1 (16 ounce)cantomato sauce
  7. 1/3cupbell peppers, minced
  8. 1teaspoonoregano
  9. 1teaspoonbasil
  10. 1/2teaspoonblack pepper
  11. 1pinchcayenne
  12. 1bay leaf
  13. 1/4cupdry red wine

DIRECTIONS

  1. 6 servings.
  2. Place chicken in the slow cooker.
  3. Cover with the onions, then add all of the other ingredients.
  4. Cook on low for 6-8 hours.

Mexican Fiesta Recipe

INGREDIENTS

  1. 1boneless skinless chicken breast
  2. 1cupchunky salsa
  3. 1/2cupfat-free refried beans
  4. 1/2headlettuce, shredded
  5. 1/2cupfat free sour cream
  6. slicedgreen onions

DIRECTIONS

  1. Grill chicken breast all the way until cooked.
  2. While chicken is cooking, heat up salsa on stove.
  3. Place refried beans in a microwave safe bowl and heat about 1 minute or until hot.
  4. Once chicken is no longer pink, slice into strips and mix into the salsa.
  5. Place the lettuce shreds on plate, and layer the hot beans on top.
  6. Top the beans with the chicken salsa mixture and spoon on the sour cream on to.
  7. Serve with a side of your favorite rice and garnish with sliced green onion.

Tuna Magic Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 2 (180 g)canstuna, drained
  3. 1 (400 g)cantomatoes
  4. 1red onion, cut into pieces
  5. 200g chargrilledvegetables
  6. 1teaspooncayenne pepper
  7. 1teaspoondried Italian herb seasoning
  8. 200greduced-fat cheddar cheese

DIRECTIONS

  1. Heat oil in pan.
  2. Preheat oven to 200°C.
  3. Cook onion until softened.
  4. Add tuna.
  5. Stir frequently.
  6. Add tomatoes, cook until sauce is bubbling.
  7. Add your herbs and pepper to taste.
  8. Transfer the tomato tuna mix to baking tray.
  9. Top with char grilled vegetables.
  10. Sprinkle mix with cheese.
  11. Bake in oven for about 15 minutes or until cheese is melted.
