INGREDIENTS
- 20almond macaroons
- 1cupmilk
- 25 regular-sizemarshmallows
- 2cupswhipping cream
- 1/2teaspoonalmond flavoring
- cherries(to garnish)
DIRECTIONS
- Toast macaroons at 350° until they are crunchy and well dried out, about 20 minutes.
- While they’re in the oven, dissolve marshmallows in the milk over a low heat, stirring often.Cool.
- Grate macaroons into fine crumbs.
- Add to dissolved marshmallow mixture.
- Whip cream and add almond flavoring.
- Stir crumb-marshmallow mixture into whipped cream.
- Place baking cups (I prefer the foil ones) on a cookie sheet and using a ladle, fill the cups and freeze either in foil or plastic bag.
- Remove from freezer about 20 minutes before serving.
- Garnish with cherries.

INGREDIENTS
- 1 (15 ounce)boxyellow cake mix
- 1egg
- 1/2cupwater
- 1/4cupvegetable oil
- 2tablespoonsbutter
- 1apple, diced
- 1teaspooncinnamon
- 1/4cupsugar
DIRECTIONS
- Preheat oven to the directions on the cake box.
- Mix cake mix to direction on box. Butter a 9 by 9 inch cake pan.
- Arrange diced apple on top of the cake and sprinkle liberally with cinnamon and sugar.
- Bake 20-25 minutes or until cake is done. Serve warm.

INGREDIENTS
- 3lbsbroiler-fryer chickens, cut up
- 3tablespoonsbutter
- 1smallonion, thinly sliced
- 2garlic cloves, minced
- 1 (16 ounce)candiced tomatoes
- 1 (16 ounce)cantomato sauce
- 1/3cupbell peppers, minced
- 1teaspoonoregano
- 1teaspoonbasil
- 1/2teaspoonblack pepper
- 1pinchcayenne
- 1bay leaf
- 1/4cupdry red wine
DIRECTIONS
- 6 servings.
- Place chicken in the slow cooker.
- Cover with the onions, then add all of the other ingredients.
- Cook on low for 6-8 hours.

INGREDIENTS
- 1boneless skinless chicken breast
- 1cupchunky salsa
- 1/2cupfat-free refried beans
- 1/2headlettuce, shredded
- 1/2cupfat free sour cream
- slicedgreen onions
DIRECTIONS
- Grill chicken breast all the way until cooked.
- While chicken is cooking, heat up salsa on stove.
- Place refried beans in a microwave safe bowl and heat about 1 minute or until hot.
- Once chicken is no longer pink, slice into strips and mix into the salsa.
- Place the lettuce shreds on plate, and layer the hot beans on top.
- Top the beans with the chicken salsa mixture and spoon on the sour cream on to.
- Serve with a side of your favorite rice and garnish with sliced green onion.

INGREDIENTS
- 2tablespoonsolive oil
- 2 (180 g)canstuna, drained
- 1 (400 g)cantomatoes
- 1red onion, cut into pieces
- 200g chargrilledvegetables
- 1teaspooncayenne pepper
- 1teaspoondried Italian herb seasoning
- 200greduced-fat cheddar cheese
DIRECTIONS
- Heat oil in pan.
- Preheat oven to 200°C.
- Cook onion until softened.
- Add tuna.
- Stir frequently.
- Add tomatoes, cook until sauce is bubbling.
- Add your herbs and pepper to taste.
- Transfer the tomato tuna mix to baking tray.
- Top with char grilled vegetables.
- Sprinkle mix with cheese.
- Bake in oven for about 15 minutes or until cheese is melted.
