INGREDIENTS
- 6tablespoonsreduced-calorie mayonnaise
- 3tablespoonsfresh cilantro, chopped
- 3tablespoonswater
- 1mediumscallion, minced
- 1 1/2tablespoonsfresh lime juice
- 2teaspoonssugar
- 1/2teaspoonchili powder
- 1 (15 ounce)canblack beans, rinsed and drained
- 1 1/2cups cookedcorn kernels
- 2cupsgrape tomatoes
- 1mediumsweet red pepper, cut into thin strips
- 8cupsromaine lettuce, cut into thick shreds
DIRECTIONS
- To make dressing, whisk together mayo, cilantro, water, scallion, lime juice, sugar and chili powder in small bowl until smooth.
- Transfer to a jar or a plastic container with a tight fitting lid and refrigerate until ready to use.
- In a large bowl, layer remaining ingredients in order listed.
- Cover and refrigerate.
- To serve, spoon salad ingredients into a bowl.
- Shake dressing and then drizzle over salad, toss well to coat.

INGREDIENTS
- olive oil flavored cooking spray
- 1lbbutton mushrooms, about 24
- 1teaspoonolive oil
- 1/4cup choppedonions
- 1/4cup choppedsweet red peppers
- 10ouncesfrozen chopped spinach, thawed
- 2 1/2sliceswhole wheat bread, finely chopped into breadcrumbs
- 1teaspooncajun seasoning
- 1/4teaspoonground turmeric
DIRECTIONS
- Preheat oven to 350 degrees.Lightl coat a jelly roll pan with cooking spray.
- Remove msuhroom stems from caps and finely chop them, reserving and setting aside caps.
- Heat oil in large skillet over high heat.Saute mushroom stems, onion, pepper and spainch until tender, about 5 minutes.
- Remove skillet from heat and stir in remaining ingredients until well-combined.
- Stuff each mushroom cap with 2 T. of filling mixture.Place mushrooms, stuffed sides up, on jellyroll pan.
- Bake, uncovered, 15 minutes and serve warm.Points figured for 2 mushroomss per serving.

INGREDIENTS
- 4ouncesraspberry vodka(Stoli Razberi)
- 1ouncealize red passion liqueur
- sour mix
DIRECTIONS
- Add vodka and Alize Red passion to a shaker half filled with ice.
- Add a splash of sour mix.
- Shake vigorously and strain into a chilled cocktail glass.

INGREDIENTS
- 1/2cupbutter, melted
- 1/2cupolive oil
- 1 (1 7/8 ounce)package lipton savoryherb with garlic soup mix
- 2 1/2lbshalibut fillets(or other firm white-fleshed fish)
- 1cupdry breadcrumbs
- 1/2cup freshly gratedparmesan cheese
DIRECTIONS
- Preheat oven to 425°.
- In a small bowl, combine the melted butter, oil, and 2 tablespoons soup mix; pour 2 tablespoons of the flavored butter into a 13x 9 inch baking dish; place the halibut in the baking dish and pour all but 2 tablespoons of the flavored butter over the fish.
- In another small bowl, combine the rest of the soup mix with the breadcrumbs and cheese; toss the breadcrumb mixture with the remaining 2 tablespoons of flavored butter.
- Spread the breadcrumb mixture over the fish fillets.
- Bake the fish for 10 minutes; to check for doneness, slash the fish at the thickest part; if it is still translucent, cook for 2-3 more minutes, until the fish is white all the way through.
