INGREDIENTS
- 1 1/2lbszucchini, cut into small pieces
- nonstick cooking spray
- 1cupcheese, shredded
- 2onions, sliced
- 2eggs, beaten
- 1tablespoonbutter
DIRECTIONS
- Preheat oven to 350 degrees.
- Cook zucchini in microwave until somewhat tender. Place in bottom of a 9″ x 13″ baking dish that has been sprayed with cooking spray.
- Mix cheese with onions and eggs and pour over zucchini.
- Dot with butter and bake 25 to 35 minutes.

INGREDIENTS
- 1 (8 ounce)containerplain yogurt
- 1/2wholecucumber, seeded and finely chopped
- 1/4teaspoondried oregano
- 2wholepita pockets, each cut in half
- 8ounces deliroast porkor deli ham, thinly sliced
- 10ounces traysweet red pepper strips, drained
- 1/2cup pittedkalamata olives, quartered
- 4romaine lettuce leaves, center rib removed, washed and thinly sliced crosswise
DIRECTIONS
- For dressing, in small bowl, combine yogurt, chopped cucumber and oregano: set aside.
- Gently open pita pockets.
- Place lettuce in the bottom of each pocket.
- Top with 1/4 each roasted pork or ham, pepper strips and olives.
- Drizzle each pita with 2-3 TBs dressing and serve.

INGREDIENTS
- 2eggs
- 1cupsugar
- 1pinchsalt
- 1/2cupbutter, softened
- 1/2cupflour
- 4tablespoonscocoa
- 1teaspoonvanilla
- 1/2cupnuts, chopped
DIRECTIONS
- Preheat oven to 325 degrees.
- Place eggs, sugar, salt, butter, flour, cocoa, and vanilla in a small mixing bowl. Beat until smooth.
- Stir in nuts.
- Pour into greased 9″ pie pan.
- Bake 30 minutes.

- 16ouncesturkey, cooked and diced
- 1cupscallionsor green onions, diced
- 1/2cupgreen peppers, diced
- 1/2cuproasted red peppers
- 1/2cupRotel tomatoes, mild
- 1quartfat free egg substitute
- 1teaspoonsalt
- 1teaspoonpepper
- 1teaspoon mincedroasted garlic
- 1cup shreddedfat-free cheddar cheese
- 1/2cupfat free sour cream
DIRECTIONS
- Preheat oven to 350°.
- Drain Rotel tomatoes and the roasted red peppers.
- Mix all ingredients together.
- Pour into a 9×13 Baking dish that has been spray with a nonstick oil.
- Bake for 30-40 minutes or until firm.
