INGREDIENTS
- 2 (8 1/2 ounce)boxesJiffy corn muffin mix
- 2largeeggs
- 2/3cupmilk
- 1/2cupsour cream
- 1 (4 ounce)can dicedmild green chilies(you can substitute chopped jalepenos for an extra kick)
- 1cupcheddar cheese, shredded
DIRECTIONS
- Preheat oven to 400 degrees.
- Grease a 9×9 square baking dish. (I use stoneware).
- Combine all ingredients together in a large mixing bowl. Mix well.
- Pour into prepared baking dish.
- You can top with a little extra cheese, if desired.
- Bake 25 minutes at 400 degrees or until golden brown.
- Serve warm with butter.
- This can also be made in muffin tins.
- Variation: Add crumbled crisp bacon and 1/2 cup sour cream.

INGREDIENTS
- 1 (8 ounce)packageChicken In A Biscuit crackers, crushed
- 1/2cupbutter, melted
- 1 (10 ounce)packagefrozen broccoli, chopped and thawed
- 1 (15 1/4 ounce)canwhole kernel corn, drained
- 1 (14 3/4 ounce)cancream-style corn
- 1/4teaspoonsalt(to taste)
DIRECTIONS
- Combine cracker crumbs and butter; reserve 1/2 cup for topping.
- In a bowl, combine broccoli, both cans of corn and remaining crumbs.
- Transfer to a greased, 2-quart baking dish. Sprinkle with reserved crumb mixture.
- Bake, uncovered, at 375F for 25-30 minutes or until lightly browned.

INGREDIENTS

Crust or Cake
- 1/2cupbutter
- 1teaspoonbaking powder
- 1/2teaspoonsalt
- 1 1/4cupsflour
- 1egg
- 2tablespoonsmilk

- 4-5largeapples, peeled and sliced

Topping
- 1/2cupsugar
- 1/4teaspooncinnamon
- 1 1/2tablespoonsflour
- 2 1/2teaspoonsbutter, softened
DIRECTIONS
- Preheat oven to 350 degrees F.
- Cake/Crust: Mix dry ingredients and cut in butter as for a pie crust (mixture should be “sandy” with small pea-sized lumps of butter).
- Add egg and milk and mix well.
- Pat into the bottom and halfway up the sides of a 11 1/2 X 7 1/2 baking dish (I use large ceramic quiche pan).
- Filling: Arrange apple slices in a spiral around pan (I start outside and work in, eventually cutting pieces to fit).
- Topping: Mix topping ingredients and spread over apples.Bake for about 40 minutes or until apples are tender.
- Toward the end of the baking time you can also run it under a broiler to nicely brown the edges of the apples for the extra “wow” factor.

INGREDIENTS
- 5mediumpotatoes
- 4cupschicken stock
- 1bunchwatercress
DIRECTIONS
- Bring chicken stock to the boil in a saucepan.
- Peel and chop potatoes, and boil till soft in the chicken stock.
- Put potatoes and watercress into blender and blend, adding liquid chicken stock until the soup is at desired consistency.
- Add salt and pepper to taste, and enjoy!

INGREDIENTS
- 1cuplight brown sugar
- 1cupwater, hot
- 1/4cupbutter
- 1teaspooncinnamon
- 1/2teaspooncloves, ground
- 1/2teaspoonginger, ground
- 1/2teaspoonsalt
- 1cuporange peel, pith removed, chopped
- 1cupraisins
- 1/2cupdried cranberries
- 1/2cupdried sour cherries
- 1/2cupdried apricots, chopped
- 1 1/2cupsflour
- 1teaspoonbaking soda
- 1teaspoonvanilla
- 1cupwhiskey(optional) or rum (optional)
DIRECTIONS
- Butter a 9×5x3 loaf pan.
- Preheat oven to 325 degrees Farenheit.
- In a large saucepan, boil first 12 ingredients (brown sugar, water, butter, cinnamon, cloves, ginger, salt, orange peel and dried fruits) for 5 minutes.
- Remove from heat and allow to cool to lukewarm.
- In a separate bowl mix together flour, salt and baking soda.
- Fold wet ingredients into dry and then add vanilla.
- Pour into prepared pan and bake 45 to 60 minutes until toothpick inserted into cake comes out clean.
- Optional: While still hot, douse with alcohol.
- Wrap and store a couple of days before serving.
