INGREDIENTS
- 2cupsflour, divided
- 1 (1/4 ounce)packagedry yeast
- 1/2cupwater
- 1/2cupfeta cheese, crumbled
- 2tablespoonsbutter
- 1tablespoonwhite sugar
- 1teaspoonoregano, dried
- 1/2teaspoonsalt
- 1egg, beaten
- 1/3cupkalamata olives, chopped
DIRECTIONS
- Spray a 1 quart casserole dish or round cake pan.
- Mix 1 cup flour with the yeast and set aside.
- Heat the water, feta, butter, sugar, and oregano in a small saucepan until it is just warm (120 degrees) and the butter is almost melted.Pour this mixture into the flour.Add the egg.
- Using an electric mixer, beat on medium speed for 30 seconds or until everything is combined.Then turn up the mixer to high speed and beat for 3 minutes.
- Stir in the remaining 1 cup flour and the olives with a spoon.The batter will be stiff.
- Pour the dough into the prepared pan and cover and let it rise in a warm place until it is doubled in size (about 1 hour).
- Heat the oven to 375 degrees.Bake the bread for 25 minutes or until it is golden brown.
- Remove from the pan right away and allow it to cool.

INGREDIENTS
- 3avocados, quartered
- 1/2cupfresh cilantro, coarsely chopped
- 1/4cuponions, coarsely chopped
- 1/4cupgreen onions, coarsely chopped
- 1/4cupfresh parsley, coarsely chopped
- 1-3tablespoonlime juice
- 1teaspoonchili powder
- 1teaspoonsalt
- 1/4teaspoonpepper
- 1/4teaspoonground cumin
- 1/4-1/2teaspoonhot sauce
- 1 (32 ounce)containerchicken broth
- 1 (16 ounce)containersour cream(*See Tip)
DIRECTIONS
- Process avocado in a blender or food processor until mixture is smooth, stopping to scrape down sides.
- Add chopped cilantro and next 9 ingredients, and process until mixture is smooth, stopping to scrape down sides.
- Pour into a large bowl; stir in chicken broth and sour cream.
- Cover and chill 3 hours.
- Tip:.
- * 1 (16-ounce) container light sour cream may be substituted.
- Makes 8 cups.

INGREDIENTS
- 2tablespoonsbutter
- 1/2cuponions, chopped
- 1/2cupcelery, sliced
- 1 (8 ounce)packagefresh mushrooms, sliced
- 2tablespoonsall-purpose flour
- 2cupsmilk
- 1cupcheddar cheese, shredded(sharp)
- 1 (10 3/4 ounce)cancream of potato soup, undiluted
- 1 (2 ounce)jarpimiento, undrained, diced
- 1/4teaspoonsalt
- 1/4teaspoonpepper
- 1/4teaspoonhot sauce
- 1 (12 ounce)containeroysters, standard-size, undrained(save oyster “liquor”)
- saltines(optional) or oyster crackers (optional)
DIRECTIONS
- Melt butter in a Dutch oven over medium heat; add onion and celery, and cook, stirring occasionally, 8 minutes or until tender.
- Add mushrooms, and cook, stirring occasionally, 5 minutes. Add flour, and cook, stirring constantly, 1 minute.
- Gradually stir in 2 cups milk; cook, stirring often, 5 minutes or until mixture is thickened and bubbly.
- Reduce heat to low, and stir in cheese and next 5 ingredients.
- Cook, stirring often, 3 minutes or until cheese melts and mixture is hot.
- Add oysters and oyster liquor, and simmer 3 minutes or just until edges of oysters begin to curl.
- Serve with crackers, if desired.
- *Note:
- To make ahead, prepare the stew through adding and melting cheese. Freeze the mixture in a large zip-top plastic freezer bag for up to 2 months. Thaw in the refrigerator overnight. Heat in a Dutch oven over medium-low heat 10 minutes or until thoroughly heated. Proceed with recipe as directed.
- **Choosing the Best: Fresh shucked oysters are found in the seafood department of supermarkets or at seafood markets. We don’t recommend substituting canned oysters in this recipe. Fresh oysters come in 12-oz. containers and range in size from standards (the smallest) to counts (the largest). Standards and selects are the most economical and are the best choices for oyster stew.
