Lentils and Rice Recipe

INGREDIENTS

  1. 1cuplentils
  2. 1cupbrown rice
  3. 4cupswater
  4. 1onion
  5. 2garlic cloves
  6. 2tablespoonsbutter
  7. 1bay leaf
  8. 1teaspoonsalt
  9. 1/4teaspoonpepper

DIRECTIONS

  1. Saute onions and garlic in butter pretty low so that garlic doesnt get bitter.
  2. Add water and the lentils and rice.Cover and cook for about 1 hour.
  3. It is good alone but adding more butter before eating makes it extra creamy!
  4. dont forget to remove the bay leaf and salt and pepper to taste (you dont have to go by the measurements on those!).

Glady's Chicken Salad Recipe

INGREDIENTS

  1. 2cups dicedcooked chicken
  2. 1cup dicedcelery
  3. 1/2cupseedless grapes, halved
  4. 1/2cuporanges, diced & drained
  5. 1cupmayonnaise
  6. 1teaspoononion juice

DIRECTIONS

  1. Combine and toss together all ingredients except mayonnaise and onion juice.
  2. Mix mayonnaise and onion juice, if necessary, mix with a little heavy cream.
  3. Stir into salad and serve in crisp lettuce cups.

Holiday Spoonbread Recipe

INGREDIENTS

  1. 1tablespoonunsalted butter
  2. 1medium sizeancho chili, cored, seeded, and chopped
  3. 1red bell pepper, cored, seeded, and chopped
  4. 1teaspoonground cumin
  5. 2cupswater
  6. 1teaspoonsalt
  7. 1cupcornmeal
  8. 2cupsmilk
  9. 4largeeggs
  10. 2teaspoonsbaking powder

DIRECTIONS

  1. Preheat the oven to 425°F
  2. Butter a 2 quart casserole.
  3. In a large saucepan, heat the butter and add the ancho chili and red pepper; cook over medium heat for 2 to 3 minutes, until the vegetables are bright colored.
  4. Add the cumin, water, salt, and cornmeal.
  5. Cook, whisking, until thickened.
  6. Remove from the heat, then whisk in the milk, eggs, and baking powder.
  7. Turn into the casserole.
  8. Bake for 25 minutes, until puffy.
  9. Serve hot with melted butter passed on the side, if desired.

Chicken Divan Casserole (By Paula Deen) Recipe

INGREDIENTS

  1. 2 (10 ounce)boxesfrozen broccoli, chopped
  2. 6cups shreddedcooked chicken(or use turkey)
  3. 2 (10 ounce)canscream of mushroom soup, undiluted
  4. 1cupmayonnaise
  5. 1cupsour cream
  6. 1cup shreddedcheddar cheese
  7. 1tablespoonlemon juice
  8. 1teaspooncurry powder
  9. salt and pepper
  10. 1/4cupdry white wine (optional)
  11. TOPPING

  12. 1/2cupsoft breadcrumbs
  13. 1/2cupparmesan cheese
  14. 2tablespoons meltedbutter

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Grease an 11 x 7-inch baking dish or two 9-inch square baking dishes or one 13 x 9-inch baking dish.
  3. Remove the outer wrappers from boxes of broccoli.
  4. Open one end of the box and microwave on HIGH for 2 minutes until thawed; drain and gently squeeze dry with hands.
  5. Place the broccoli and shredded chicken into the baking dish.
  6. In a medium bowl combine the soup with mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper and wine; mix to combine, then pour the sauce evenly over the chicken and broccoli in the dish; mix slighty with a spatula.
  7. In a bowl mix all topping ingredients together then sprinkle on top of the casserole.
  8. Bake uncovered for about 30-45 minutes.

Rich and Creamy Fruit Salad Recipe

INGREDIENTS

  1. 1cupseedless grapes
  2. 1cup dicedapples
  3. 1cupminiature marshmallows
  4. 1cupmandarin orange sections, drained
  5. 1/2cupmaraschino cherries, drained
  6. 1/2cupraisins
  7. 1cuppineapple tidbits, drained
  8. 1/2cup choppedwalnuts
  9. 1/2cupshredded coconut
  10. 1 (16 ounce)containerCool Whip
  11. 1 (8 ounce)boxinstant banana pudding mix, I use the jell-o brand
  12. 1/2cupsour cream

DIRECTIONS

  1. Combined Cool whip, Sour Cream and Pudding mix.
  2. Combined the rest of the ingredients into the Pudding mixture and chill 2-4 hours.
