INGREDIENTS
- 1cuplentils
- 1cupbrown rice
- 4cupswater
- 1onion
- 2garlic cloves
- 2tablespoonsbutter
- 1bay leaf
- 1teaspoonsalt
- 1/4teaspoonpepper
DIRECTIONS
- Saute onions and garlic in butter pretty low so that garlic doesnt get bitter.
- Add water and the lentils and rice.Cover and cook for about 1 hour.
- It is good alone but adding more butter before eating makes it extra creamy!
- dont forget to remove the bay leaf and salt and pepper to taste (you dont have to go by the measurements on those!).

INGREDIENTS
- 2cups dicedcooked chicken
- 1cup dicedcelery
- 1/2cupseedless grapes, halved
- 1/2cuporanges, diced & drained
- 1cupmayonnaise
- 1teaspoononion juice
DIRECTIONS
- Combine and toss together all ingredients except mayonnaise and onion juice.
- Mix mayonnaise and onion juice, if necessary, mix with a little heavy cream.
- Stir into salad and serve in crisp lettuce cups.

INGREDIENTS
- 1tablespoonunsalted butter
- 1medium sizeancho chili, cored, seeded, and chopped
- 1red bell pepper, cored, seeded, and chopped
- 1teaspoonground cumin
- 2cupswater
- 1teaspoonsalt
- 1cupcornmeal
- 2cupsmilk
- 4largeeggs
- 2teaspoonsbaking powder
DIRECTIONS
- Preheat the oven to 425°F
- Butter a 2 quart casserole.
- In a large saucepan, heat the butter and add the ancho chili and red pepper; cook over medium heat for 2 to 3 minutes, until the vegetables are bright colored.
- Add the cumin, water, salt, and cornmeal.
- Cook, whisking, until thickened.
- Remove from the heat, then whisk in the milk, eggs, and baking powder.
- Turn into the casserole.
- Bake for 25 minutes, until puffy.
- Serve hot with melted butter passed on the side, if desired.

INGREDIENTS
- 2 (10 ounce)boxesfrozen broccoli, chopped
- 6cups shreddedcooked chicken(or use turkey)
- 2 (10 ounce)canscream of mushroom soup, undiluted
- 1cupmayonnaise
- 1cupsour cream
- 1cup shreddedcheddar cheese
- 1tablespoonlemon juice
- 1teaspooncurry powder
- salt and pepper
- 1/4cupdry white wine (optional)

TOPPING
- 1/2cupsoft breadcrumbs
- 1/2cupparmesan cheese
- 2tablespoons meltedbutter
DIRECTIONS
- Set oven to 350 degrees.
- Grease an 11 x 7-inch baking dish or two 9-inch square baking dishes or one 13 x 9-inch baking dish.
- Remove the outer wrappers from boxes of broccoli.
- Open one end of the box and microwave on HIGH for 2 minutes until thawed; drain and gently squeeze dry with hands.
- Place the broccoli and shredded chicken into the baking dish.
- In a medium bowl combine the soup with mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper and wine; mix to combine, then pour the sauce evenly over the chicken and broccoli in the dish; mix slighty with a spatula.
- In a bowl mix all topping ingredients together then sprinkle on top of the casserole.
- Bake uncovered for about 30-45 minutes.

- 1cupseedless grapes
- 1cup dicedapples
- 1cupminiature marshmallows
- 1cupmandarin orange sections, drained
- 1/2cupmaraschino cherries, drained
- 1/2cupraisins
- 1cuppineapple tidbits, drained
- 1/2cup choppedwalnuts
- 1/2cupshredded coconut
- 1 (16 ounce)containerCool Whip
- 1 (8 ounce)boxinstant banana pudding mix, I use the jell-o brand
- 1/2cupsour cream
DIRECTIONS
- Combined Cool whip, Sour Cream and Pudding mix.
- Combined the rest of the ingredients into the Pudding mixture and chill 2-4 hours.
